Sue's Baba Ghanoush
These are all good recipes. I don't like the "smoky" taste, so I never roast/char the eggplant first. I cut the raw eggplant in big thick slices, peel off the skin, and microwave the eggplant (in covered casserole, bit of water) until soft. Let cool completely, drain, and proceed with recipe, in blender.

Miguelina's Poblanos and Cheese
This is a fine recipe. Mine is simpler. I don't bother charring and peeling the peppers. I put them in a toaster oven and bake until they're soft. (Slit them first so they don't burst!) Let them cool, then take them out and seed them. Fill them with whatever cheeses you have around. Bake again until the cheese is melted. I know the true Mexican method is probably better!

Good recipe but could still be simpler! I cut the peeled eggplant in big chunks and microwave it until it's very soft (add a bit of water first). Allow it to cool, then pour off the water and put all the ingredients in the food processor and proceed as the recipe directs. This skips all the charring, which I don't like anyway. The ingredients are fine as listed, but you should taste as you go along to see how lemony you want it. I don't add any olive oil. You can skip the sesame seeds.
