Chicken Pot Pie IX

Reviewed: Nov. 15, 2007
Great recipe! My family really enjoyed it. I made a couple revisions. First, I used a garlic herb rotisserie chicken. I removed the meat from the bone and cut it up to add later. Then I boiled the veggies in chicken broth with the skin of the rotisserie chicken. I removed the skin, after 15 min, and discarded it. I also saved this broth to use for the sauce. Also, following other's suggestions, I made extra sauce which made the pie very moist and tasty. I also added red potatoe to the veggies Even my small children loved it. Using a rotisserie chicken added a lot of flavor. The only thing that I would change was that I thought boiling the veggies for 15 min. was to long. They were mushier than I like. I will make this again.

These were fantastic and easy. I made them into cupcakes for Easter. The kids loved to help make them and eat them. They are beautiful when you bite into one. Great way to celebrate Spring!

Mom's Paprika Chicken with Potatoes

Reviewed: Apr. 24, 2010
Very easy and very yummy. I took another reviewer's advice and put the potatoes and carrots under the chicken. They were nice and soft and they were very nicely carmelized, which my family loved!

Monkey Bread Muffins

Reviewed: Apr. 25, 2010
I didn't have apple pie spice so I just used cinnamon instead. I doubled the recipe and they were still all gone. We all loved them. Very fun to make and to eat! Eat them while they are still warm and gooey!

Tilapia Soft Tacos with Chipotle Cream

Reviewed: May 4, 2010
These are amazing!!!! The only change that I made was using a bagged coleslaw mix instead of the greens. I love the crunch of cabbage with fish tacos. You can't beat these!

Six Can Chicken Tortilla Soup

Reviewed: Nov. 15, 2010
I gave it only 4 stars because it does need to be doctored up a little to not be bland. I used cumin and chili powder. Definitely needs to be served over tortilla chips with cheddar cheese. The cheddar cheese really gives it flavor. It was a very easy, tasty soup though for a night full of kids activities.

Pumpkin Turkey Chili

Reviewed: Nov. 21, 2010
I tested this recipe first as written and it was good. Then I added another can of tomatoes with green chilies and some cayenne pepper (to taste) because I like more tomato taste and it was bit bland for me. It was then very, very good. I think if I add some beans, no one would even know that it had pumpkin or turkey. This is a recipe that I will continue to make and tweak. I love the healthiness of it. It is a very good base recipe to suit to your own tastes.

Turkey and Quinoa Meatloaf

Reviewed: Dec. 27, 2010
This was great! I left out the hot sauce. My kids would not have eaten that. I love when I can sneak in healthy food and noone knows. All of it was eaten. To bad, I had been looking forward to a meatloaf sandwich tomorrow. It has been a while since my first review. This is a family favorite. There is never any left and the kids say "don't stand between me and my meatloaf". They have no idea how healthy it is they just know that they love the taste. For my family's taste I always substitute ketchup for the tomatoe paste and barbecue sauce for the hot pepper sauce. It is always perfect for us this way. Also, I don't use any salt. I never use salt in cooking. My family favorite from this site!

Christmas Breakfast Sausage Casserole

Reviewed: Jan. 16, 2011
This was very good. My only change was to use 6 eggs instead of 4. I wanted it eggier. My whole family loved it and it was super easy for me to make Sunday morning breakfast, since I only needed to pop it in the oven in the morning.

Strawberry Oatmeal Breakfast Smoothie

I loved it. Easy and filling. The kids didn't since it tasted to much of the oatmeal. That just means that I won't have to share!

Mama's Asian Chicken and Rice

This was very good. Just a hint of heat so my kids didn't even complain about it. In fact, my 7 year old said "I really like this meat." Which is big compliments from him.

Super-Delicious Zuppa Toscana

Reviewed: Jan. 17, 2011
I have a tendency to never rate a recipe unless I really liked it. This one has to be one of my absolute favorites from this site though. The only change that I made was only using 1 t red pepper flakes and I used kale instead of spinach, which added a really nice texture and flavor. You should try this one!

Chicken Spaghetti Casserole I

Reviewed: Mar. 20, 2011
I was looking for something similar to a turkey tetrazzini that they made in my dorm in college. It was the only food that I loved there. This was very close and very good. I followed the recipe exactly except that I used cream of chicken soup. It was not dry at all. Also, not cooking the veggies before adding them made for the strong flavor. It was definitely not bland. My very picky teenage daughter said "I don't know what it is but I really like it!" Loved it!

Bacon for the Family or a Crowd

Reviewed: Apr. 4, 2011
I've used this method of cooking bacon for years. I always use a rack though so that the bacon is not sitting in grease. It cooks very evenly that way. With a rack, you can cook thin or thick cut bacon. Just keep an eye on it. The cooking time will vary. My cooking temp has always been 350-375.

Mom's Turkey Sausage Patties

Reviewed: May 16, 2011
This was really good and very easy. I did add 1-1/2 T of maple syrup. Also, I cut back on the amount of salt (because I always cut salt) and I probably should have cut the cayenne since it was a little too spicy for the kids. They ate it but complained about it being a little spicy. I did only use a package of ground turkey which is 1.25lbs but didn't cut the spices. I did use a 85/15 ground turkey and it was not dry. I loved the flavor!

Orzo with Parmesan and Basil

Reviewed: Jul. 23, 2011
Perfect. I made it just as written. I had plenty of fresh basil picked fresh from my garden. It was a perfect side dish. My 8 year old son had 3 helpings. In my opinion, the basil is essential. The flavor of the fresh basil added so much to the parmesan and made it so flavorful.

I have made this lots of times. It is a favorite in my family and I use different add-ins each time depending on what I have on hand. The kids love it. It also reheats well so we enjoy having one cooked and on hand for those rush dinners during the week.
