Garlic Cheese Quick Bread

This is a wonderful basic easy bread. I made a few small changes so I could use what I had on hand. I didn't have garlic and shredded cheese so I used onion flakes and parmesan. I also didn't have the full time to allow them to cook so I divided them up into a muffin tin which halved the cooking time. My family absolutely LOVED them. They are definately more "cakey" than standard bread but I think that was what we liked about them. Will make again!

Italian Bread Bowls

Absolutely wonderful! I made the standard 8 bowls (they each hold a serving but the bowls are sturdy enough that we just ate the top and middle with the first fill and then refilled the bowl with more soup :) We used four of the bowls and I individually wrapped and froze the other four. We've been thawing those out and slicing up for bread with dinner, which makes enough for the four of us with each "bowl". I also added Italian Seasoning and onion flakes to the dough before baking and they go perfectly with savory dishes. Will definately be putting this at the top of the recipe pile!

Black Bean Brownies

I wish I could give this a higher rating but I just can't. No one in my family really liked these...not even after I tried making a simple powdered sugar icing to gloop on top. Way too much bean flavor for me and the texture was definately different. I think I could get past the texture if they didn't taste like you dipped a bean in chocolate. The only thing I did differently was I didn't have instant coffee so I used 3 tablespoons very strong coffee as recommended by another reviewer. I like the taste of beans and I like the taste of chocolate but I just couldn't do these two together. There are plenty of rave reviews so maybe I'm just doing something wrong...?

Whole Wheat Pasta

I've never handmade pasta before so this was eye opening. I originally planned on making lasagna noodles but had so much dough leftover that I made lasagna as well as small egg noodles and both came out very well. The only complaint I have is that I did have to add extra water to the recipe and even then it was a very tough dough to knead not to mention roll out hithin enough for good noodles. All in all, though, the work was well worth it as the noodles came out quite well and definitely easier to cook than dry noodles! I will definitely be using this again!

Quick and Easy Pizza Crust

Absolutely wonderful! I literally make this once a week for my family of 4. It makes a VERY large pizza so I usually make a pizza from most of the crust and seperate off the bit extra to make breadsticks (dip in extra pizza sauce). I also add flavorings to crust like Italian Seasoning, minced garlic, even a little Parmesan cheese.

Slow-Cooked Corn Chowder

This recipe is great! I use any kind of leftover meat (ham, turkey sausage, even ground beef) to add flavor (and clean out the fridge). I start it in the morning before work and by the time I get home dinner is done!

Whole Wheat Blueberry Pancakes

I use this recipe almost every weekend! It is so versatile that I can make different kinds with whatever I have on hand. I've used ripe bananas, blueberries, blackberries, and even used just cinnamon/nutmeg/cloves/vanilla when I didn't have any fruit. You can sub some or all while flour if you are running low or have picky eaters. I even use vanilla soy milk to add that hint of vanilla and sweetness. I use Splenda instead of packet sweeteners and find that 1/4c of Splenda does the trick. These are so good you can eat them without any syrup! I usually make a double batch and put the extras in the fridge or freezer. Just pop in micro or toaster and you are good to go! You don't even have to worry about overly juicy fruit, like if you use frozen, because I usually end up using more than the cup of milk and the juice makes up the difference. I absolutely love this recipe and it is SO easy to mix, match, change, add and still I have yet to have a bad batch! I even keep them warm in the oven while cooking other items and they still turn out great! Top with some sugar free syrup and it is the best "healthy" breakfast that the kids won't even notice there's no added sugar!

Honey Cornbread

I made a few changes to make this a bit more on the healthy side for our family. Instead of the cream I subbed it with skim milk, and instead of sugar used Splenda but left everything else the same and it turned out Great! Very sweet!

Quick Black Beans and Rice

This was really quick, really easy and really good. I think the only change I made was instead of plain canned tomatoes I had some tomatoes that were canned with peppers which added a nice spice to the dish. Add some cornbread on the side and we had a great lunch for a low cost!
