Deelish chicken! I didn't have an onion, so I used dry minced onion inside the cavity. I also would use 1/2 the salt and cut the cooking time by 1hr for a 5lb chicken. I cooked it for 5.5hrs and it was yummy and falling off the bone, but I would have liked to been able to cut it, instead of shred it! I used the entire amount of seasonings on one 5lb chicken. I rubbed under the skin as well as on top. And I only marinated it for about 1.5hrs. My family loved it, minus it being a little on the salty side, which is why next time I'll use half the amount of salt.
