Enchilada Stuffed Shells

yum! so good! I used a whole can of refried beans, diced chiles and some taco seasoning and served on a bed of shredded lettuce! so good!

Grilled Tequila-Lime Shrimp

The shrimp was just okay, sort of tasteless though, would marinate longer and add some more spices. I added red chili peppers on the shrimp themselves and that helped.

Incredibly Cheesy Turkey Meatloaf

Fabulous! so easy to make, I overloaded it with peppers, onions and carrots and it was a little much so next time I won't put as many veggies. I used super lean turkey, skim milk, and 2% cheese and came out great!
