Delicious Ham and Potato Soup
I've made this soup a dozen times and it always hits the spot. My boyfriend raves about it, and between the two of us one pot never lasts very long. I'm not big on ham so I always use kielbasa sausage instead...soo delicious. I love fresh ground pepper, so I'm really generous with it, and I also add a little garlic powder for some zing. In my opinion, this soup is definitely best the following day, after reheating.

Granny Kat's Pumpkin Roll
What a great recipe, and it was actually pretty easy to make. After making some soup I had leftover butternut squash and I was looking for a recipe that I could use it in -- this one worked perfectly! Since squash is a little sweeter than pumpkin, I reduced the sugar by a 1/4th cup. I was out of vanilla extract so I used maple syrup in the frosting, which I think was almost better since it added to the "autumn-y" flavor. I was worried about the cake cracking, but the texture was so spongy that I didn't have any problems at all while rolling it.

Green Curry Thai for Kings
Delicious and easy! This was my first time making Thai curry (even though I've had it many times in restaurants) and I was surprised at how well it turned out. I would recommend squirting a little lime and garnishing with cilantro right before serving because it makes it taste really fresh. I also reduced the amount of baby corn in it because a full 15 oz. can seemed like a lot.
