Apple Glazed Pork Tenderloin

This was delicious and easy! I only had a little apple jelly, so ended up using a mixture of apple jelly, apricot preserves and cherry preserves. I was worried it would be too sweet, but it came out perfect. Tender and delicious. My husband Loved it. Also, used Chardonnay (it's what I had on hand). This is definitely going in the rotation!

Cake Balls

Very time-consuming, and mine didn't come out as pretty as the pictures, but I made these for a holiday party and people still make comments about them, so I'm sure I'll be making them again this holiday season! I followed other advice and waited for the cake to cool before mixing with the frosting, and used forks to dip the balls in the chocolate. I used red velvet cake, vanilla cream cheese frosting, and both milk and white chocolate for the outside. Get more than you think you'll need - if you're a novice like me, you will end up with a lot of it going to waste. These kept in the fridge for a while, so I ended up eating waaay too many!

Lime-Marinated Grilled Salmon

This has become my go-to salmon recipe. I don't always marinate for the full hour, and instead wrap the salmon in aluminum foil and grill with a little extra marinade in the packet. Makes for less clean-up, no need to worry about flaking apart on the grill. Delicious and simple!

Chicken Vermouth

I didn't have vermouth, so I used Marsala wine instead. The taste was fine - I mixed the extra sauce with rice, and it was tasty. But the presentation is not super appealing. This is something I would make when I don't have a meal plan and haven't been to the grocery store. Not a dish I would make for company because it looks like something out of the 50s.

Zesty Rice 'N' Bean Casserole

I have made this twice in the past week. Great for entertaining - you can even make it ahead of time and just reheat. I used red bell peppers because I don't like green ones, added some black beans and thawed frozen corn. My husband isn't a fan of vegetarian entrees, but even he admitted that this one doesn't need meat. I do find myself having to add extra water after the rice is in, so I would suggest keeping an eye on it. Delicious, and perfectly spiced.

Salsa Chicken

This recipe is great - easy, with hardly any clean up. I didn't have taco seasoning, so I just used come chili powder, cumin, paprika, salt, pepper flakes, and some garlic pepper. It had some kick, but you can manipulate the amount of spice. This will definitely be a staple in the rotation.
