Tofu Vindaloo

This turned out really well. I did not have vindaloo curry so just used regular. It was not really spicy. I also threw in some cashews with it. Great dish!

Sweet Potato Chicken Skillet

What a quick and easy main dish. Mine was a bit different in that I had cooked chicken in the freezer and just added it to the sweet potatoes long enough to warm it up. Great taste. Will definitely fix again.

Honey Wheat Sandwich Rolls

This has been my primary recipe for years. I use it mainly for dinner rolls but it makes great hamburger/hotdog buns too. I usually freeze half of the batch and bring them out for dinner in the coming days. Great recipe!

Spinach Phyllo Cups

The taste was good and very easy to make. I might add an extra egg next time but one thing I would suggest if you buy the frozen chopped spinach is to chop it up into finer pieces since it was a little stringy when I made it. And what makes phyllo cups so expensive anyway? Yikes.

Lemon Sugar Tea Cookies

These cookies taste fine but I had a real problem with the form. I made them exactly as the recipe called and knew someone had said they are very flat so I spaced them a good distance apart but the whole tray cooked into a flat thin mass. The next batch I put into muffin tins to see if it would help them keep their shape but they puffed up on the sides with a big indentation in the middle. That would be fine if you wanted to fill it with preserves or something else but I just can't seem to get these to have a normal shape.
