Spicy Sweet Potato Salad

This recipe is great! I thought the curry was a little too strong, so next time, I'll cut it down to 1/2-3/4 T; also, the onions turned out kind of stringy; I'll quarter and then thinly slice. But overall a wonderful alternative to traditional potato salad!

Chinese Chicken Salad III

This recipe is absolutely fabulous! Very tasty. The only thing I did different was add some bean sprouts for extra crunch and flavor. Terrific!

Orzo and Tomato Salad with Feta Cheese

This recipe is fabulous. Such great flavors all in one simple salad. I just cut the amount of olive oil in half to cut down on the fat. It's great!

Coconut Curry Tofu

This recipe is fabulous! Some changes...after I added the basil and bok choy, I cooked it for only one more minute...and tossed in most of the green onion in the last thirty seconds. Also, my chili paste had some extra garlic, which added another tasty dimension to the dish!

Sweet Potato Soup

My family and I thought that this soup was wonderful. I did make some changes to reduce the fat content: instead of using heavy whipping cream I used 1% milk. I also added a small amount of a salt/pepper spice blend and I always sprinkle on lemon pepper at the table. YUM!

Chicken-and-Pasta Bake with Basil

I think this recipe is great! And the cream sauce is lower in fat than alfredo sauce, too. However, I thought that the sauce was a bit too thick, so next time I will try adding a 1/2 cup more milk.

I'd give this 6 stars it is such a fabulous soup! It has such great flavor...a hearty home flavor. Definitely one of my favorite soups now!

Marshall Islands Macadamia Nut Pie

This was an interesting recipe. I love macadamia nuts, but this pie needed more sugar. I think I was expecting something as rich as my pecan pie. I also would reduce the amount of nuts to 1 1/2 cups and increase the coconut to 1/2 cup.

Award Winning Peaches and Cream Pie

I have tried this recipe twice now, and I do not like it at all. The crust is way too thick, there are not enough peaches, and the cream cheese mixture does little for the pie. I definitely would not have won an award for this pie.

Somerset Pork with Cream and Apples

Sausage Brunch Quiche

I loved this recipe! But I ate it for dinner since it had a spicy punch. Instead of chorizo, I used chicken italian sausage from Marketday for a healthier, reduced-fat version.
