Vegetarian Chickpea Sandwich Filling

When I stopped eating meat, I really missed chicken salad. :( That was several years ago.... I was THRILLED to find this recipe! It really has the texture and flavor I missed from chicken salad. I doubled the mayo (I used miracle whip) and diced veggies, for my personal preference. I did try it before adding the additional mayo and veggies and enjoyed it quite a bit as written. I didn't change anything else. It's a keeper and a staple in my fridge. I've tried it on toasted bread, pitas and crackers. Very versatile!

My Crispy Mashed Potato Pancake

This is the easiest recipe. it cooked up yummy and brown and even. I should have taken a picture of my result. It looked almost exactly like the picture in the recipe. Unfortunately, we ate it all and now it's too late to share my success. Best and easiest use of leftover mashed potatoes!

Anniversary Chicken I

I made this for my husband and he enjoyed it. He does not enjoy ranch as a salad dressing or many ranch flavored things. But, he said he couldn't even distinctly taste the ranch because all of the flavors combined so well.

Butter Bean Burgers

Followed the recipe exactly. Burgers came out great. They are pretty floppy at first, but after a couple minutes in the oil, they hold their shape well. I thought they might burn, but 5 mins per side is pretty dead on. When done, the outside is a nice crispy texture (almost like the outside of a fried tenderloin), the inside is pretty mushy... but it's beans and it wasn't off-putting. They were not too spicy with the minced jalapeno either.

Honey Mustard Tofu

I didn't really enjoy this. I cooked the sauce seperately and it ended up cooking down to just about nothing. I didn't have enough to cover all of my tofu. I wasn't really sure about the bouillin mixed with the honey mustard either... I tried tofu slices and tofu cubes. They were ok. I did not have any problems with the breading staying on. But they were not crispy at all, maybe too much butter. Next time I fry tofu I will use oil instead of butter. And I will use a different sauce. My husband ate his entire plate, but I think he was just being polite.

Toasted Pumpkin Seeds with Sugar and Spice

It took longer than 45 seconds for the sugar to melt... more like a couple minutes and by that time the seeds were popping. I think next time I will try butter and melt the sugar before tossing in the pumpkin seeds. I'll add another review once I have tried this. Also, didn't have pumpkin spice so I used 3/4 cinnamon and 1/4 nutmeg. It worked fine. The flavor is great, just iffy on the cooking process.

Fried Green Tomatoes II

That previous recipe was really harsh. I've never made these before so I experimented with thickness and browness. I think it is all just personal preference. I did dunk in egg before breading just because that is always how I have fried anything. I would have submitted a photo, but my husband ate all of them before I could find my camera!

The best part about this recipe is the preparation (baking). That is a great tip. The rub and bbq sauce are killer too! (didn't use all the rub, more than enough plus some)

I am a vegetarian and hubby is not. I make the veggies seperate and use vegetable broth instead. great flavor. I roast the peppers fresh and use fresh asparagas. yum!

Mouth Watering Medley

I've made this twice now. Followed exactly on the first go. The second time I used two small onions (1 lrge onion would do as well), 2 overflowing cups cubed ham, 4 lrge potatoes (I had used smaller ones before), and 1 extra egg. I also sprinkled some seasoned salt on top of the potatoes before adding the onion broccoli mixture. It was kinda bland the first go around. The second time was perfect and very much more filling. Hubby absolutely loves it. I will probably steal it as a trademark breakfast dish for guests. Thanks for a great recipe.

Skillet Sweet and Tangy Chicken

This is a great recipe. I did not make rice. I served it with garlic mashed potatoes and roasted red pepper. I also added minced onion to the sauce (1/2 onion.) :)

Peanut Butter Crispies I

These turned out great. Didn't have quite enough corn flakes, so I used 2/3 corn flakes and 1/3 rice krispies. We had some warm (couldn't wait) and cooled and they were a great texture. not too sticky or crumbly. yum. a++

Old Virginia Wassail Cider

I didn't follow this recipe exactly. I used the cidar, honey, and orange juice (freshly sqeezed), but didn't have pinapple juice available. I put the cloves in a tied coffee filter, let the cinnamon just float in the drink, and I also put some orange wedges in there (they looked great.) This was actually kind of sweet for me, but the kids I babysit and my husband loved it!

World's Best Lasagna

This was a good recipe. But I prefer quicker prep and fewer ingredients. I love the idea of using sausage, and I thought the mozzi cheese was a nice touch. I think I will steal those ideas but just use store-bought spaghetti sauce in the future.
