Oatmeal Peanut Butter and Chocolate Chip Cookies

I thoroughly enjoyed this recipe. However, like most people I made some adjustments. First, I used only 1/4 cup butter because I upped the peanut butter to 1 cup + (estimated) I also only used 1/2 cup brown sugar. I added cinnamon and changed the water to milk. Also omitted the chocolate chips because I didn't have any. They turned out amazing though! :) Will most definitely make again.

Oatmeal Apple Muffins

I made these yesterday and my boyfriend loved them. I did make a few changes. First, I didn't use nuts or cranberries and I also didn't have any fresh apples on hand. So I used applesauce instead and I also added a banana to the mixture before baking. I also cut out the nutmeg. They turned out really well. The recipe is kind of small so next time I'd probably double it.

Banana Pancakes II

I love the basics of this recipe. However I do make a lot of changes. Instead of using A.P flour I use all whole wheat. I also, mash the bananas before adding to the mixture. Then I have to add more milk and about 1 tsp of vanilla and some cinnamon. I make my own buttermilk also. Then while cooking, I add frozen raspberries. They turned out delicious. I've made these twice now and will more than likely make them again!

Chicken Parmigiana

I made this for dinner tonight for my family. It turned out better than I expected. However, I did add a lot of Italian seasoning to both the chicken and to the sauce. To my bottle of sauce I also added garlic salt, Parmesan cheese, and pepper. I did pour the entire bottle of sauce to the pan. Then added the chicken on top, with mozzarella on top of it all. It turned out wonderfully. I served it with salad, garlic-buttered rolls, and angel hair pasta.

Cranberry Scones

I made this recipe for a Christmas Breakfast. They turned out really well. I didn't use half-and-half because I didn't have any on hand, so I used about a half cup of 2% milk. I used dried cranberries instead of real ones because the flavor isn't as bitter and is more sweet. I didn't have to mix them with water as one person did, since the sugar seemed to stick pretty well. I skipped out on the walnuts. Overall it is really good recipe and most everyone liked them.

Lower Fat Banana Bread II

I love this recipe. It uses applesauce instead of oil which dramatically cuts down on the fat and makes it much more healthy. I also added probably 2-3 tbsp of cinnamon and I also like to add a dash of cloves for taste. Overall, this recipe is quite wonderful.

Crustless Pumpkin Pie

Wow! I actuall tried this recipe twice, just because I had more pumpkin and milk to use. It was amazing. To the second pie, I added more spices (like cloves, nutmeg, and cinnamon) and more pumpkin too. I think that it came out better than the first one. I really enjoyed this recipe and probably will use it again! Oh and don't be afraid of the water bath, it's really simple and makes the pie turn out even more yummy.
