Simple Sloppy Joes

Reviewed: Jun. 28, 2009
Tasty! But in my opinion, don't add the mustard, as one reviewer suggested. A splash of worcester is good but it doesn't take much.

Chicken Melt

Reviewed: Oct. 7, 2008
I think this would be delicious as written. I did make a few changes: for about 5 minutes sauteed the sliced onion in a little butter and olive oil with a teaspoonful of that chopped garlic you get in a jar. Then put in the chicken breasts right in among the onions and slightly browned on each side. Then put in rosemary and thyme (I had fresh) with big splash of red wine and simmered the whole thing for about 15 minutes, 10 of which were covered. For another 3 minutes (about) I put the slice of swiss cheese on, covered. Served with rice. My kindergarten-age boys LOVED this.

Tomato Bread Salad

Reviewed: Sep. 10, 2008
I couldn't get enough of it!!! And I halved the recipe but it was still so much that I shared with my neighbor (and now I'm printing it out for him, too! He loved it!). Make sure you seed the tomatoes, in my opinion. Also, I toasted my bread since it was fresh and I wish I had toasted it just slightly longer. 350 degrees on a cookie sheet, sliced about 1/2" thick for about 8 or 9 minutes would be perfect to me.

Taco Seasoning Mix

Reviewed: May 18, 2008
YUM. I will never go back to storebought packages of taco seasoning again, with all their extra preservatives and all those additives... Didn't do the pepper flakes or my kids won't eat it. And I didn't have dried onion so I just added onion (and garlic) browned with the ground beef.

Old Fashioned Onion Rings

Reviewed: May 18, 2008
AMAZING!! Love these rings! I only had "Italian-style" bread crumbs in the house but used them anyway and they were great!! First few weren't quite salty enough but remedied that with adding about a teaspoon or so more salt to the breadcrumbs - didn't have to salt them after frying after that. These were SO crispy and perfect. Thanks to the reviewer who said they battered in the bag and breadcrumbed in the container. Did both and had fantastic results. Also thanks to the skewer over the bowl draining trick!!

Three-Bean Soup

Reviewed: Apr. 19, 2008
Yummy and tasty. I soaked dried beans overnight in the crockpot, then drained them in the a.m. before adding all the extra stuff (which I had pre-cut and put in a baggy the night before). Added the water, a big can of chicken broth, and the dried herbs and viola! Delicious bean soup with hardly any effort at all! I cooked on low in the crockpot for about 11 hours.

Beans and Greens

Reviewed: Apr. 19, 2008
As described, even if the beans are drained, it is way, way too salty - thus just three stars. However, if using dried beans, it would be really tasty! Overall, a great idea for a recipe if you get rid of the excessive sodium.

Campbell's® Creamy Dijon Chicken with Rice

Reviewed: Mar. 16, 2008
I didn't have any cream of celery so I tried cream of mushroom instead. I read the comment about lemon but decided to go a different route and added a good-sized dash of worcester sauce too. Mixed the mustard, soup, w sauce and pepper together in a cup before pouring it all over the chicken and simmering. It was great!! Whole family loved it, including my two little boys. Easy and fast.

Fabulous Fajitas

Reviewed: Mar. 15, 2008
I was excited to try this after reading some reviews...but was really disappointed. If you're going to go to the trouble of slicing up the onions and peppers and cooking it all up for fajitas and then just add a packet of dry something or other, it is WORTH IT TO ADD THE FAJITA MIX INSTEAD! Maybe I'm a fajita-snob but this is pretty boring and certainly no easier than adding a dry packet of fajita mix.

Ham and Green Bean Casserole

Reviewed: Mar. 3, 2008
Kind of weird but the flavors all work very well together. WARNING: Don't be an idiot like me - either use instant (I never have that on hand) or COOK the rice a little first. You'd think that was fairly basic but the minute I put it together I thought, "oh, that's not good." And cooked it anyway. The rice was mostly crunchy. But the rest was yummy. I'll do it again. And it's a great way to use up leftovers!!

T's Sweet Potato Fries

Reviewed: Mar. 3, 2008
Clearly I am not doing something right because these things were not even close to crispy. My kids liked them anyway but they were pretty soggy. And I only microwaved them 1/2 the recommended time, as I had read in earlier reviews. Too bad. But I will try again anyway. It's a good idea and surely I can make it work eventually.

Stewed Cabbage

Reviewed: Mar. 3, 2008
Very yummy! I put a serious dash of balsamic vinegar in while it was cooking the first 15 minutes (before the tomatoes were added). I put in about 2x as many tomatoes as called for since I read earlier reviews recommending more tomatoes. Also, it was pretty dry-looking so I added about 1 cup of chicken broth and simmered it all until the liquid was mostly gone. Even my 3-year-old said he liked it.

30-Minute Minestrone

Reviewed: Feb. 27, 2008
Easy and very tasty!! I cooked the vegetable part exactly as directed - but then added two cans of beef broth plus a little water instead of water/bouillon. I also added a couple of generous "dashes" of Worcestershire sauce, some oregano and basil.

Simple Slow Cooker Meatloaf

Reviewed: Feb. 16, 2008
Sadly, though I followed the directions exactly, it was dry and dense. Perhaps it was due to my crockpot - maybe it cooks faster than "usual" but I won't try this recipe again. Not worth it.
