Grandmother's Buttermilk Cornbread

Reviewed: Jan. 7, 2009
I was in the mood for cornbread - something I haven't eaten since I was little. This came pretty close. Next time I'll try using 1/2 c. sugar as I found it a bit too sweet. Thanks for the recipe!

Baked Apples

These are very simple to make and taste really good. An excellent addition would be to add chopped nuts.

Cafeteria Carrot Souffle

Reviewed: Mar. 19, 2009
I don't know why this wasn't exciting for me. I chopped the carrots in the processor and baked for 1.25 hrs, but followed everything else to a T.

Slow Cooker Beef Stew I

Reviewed: Mar. 21, 2009
This was soooo delich! I made it with soy sauce and cider vinegar for the Worcestershire sauce, and substituted chicken broth for the beef broth, cause I didn't have either or hand. I also added 2 med sweet potatoes cause dh loves them more than white potatoes. We loved how it tasted! Will definitely be making again!

Chicken Marsala

Reviewed: Sep. 2, 2009
Wow! I was looking for a quick prep meal that wasn't something along the lines of pizza or burgers. This was really quick, healthy, easy to make and tasted like a gourmet spent all day in the kitchen for it! I served it with a rice blend and salad. Delicious!

Cherry Tomato Salad

Reviewed: Nov. 14, 2009
This is a delicious and healthy salad! I ended up using 2 packages of grape tomatoes for the cherry tomatoes, since they were more cost effective, and substituted some slivered almonds for the pine nuts (didn't have any on hand). Served it for dinner one night, and dh raved about it. We had company later in the week, and I served it again, only to hear how delicious it was! Thanks so much Keren! Definitely a keeper!

This was really good! Was surprised at the amount of cukes needed, but it ended up great! Substituted 3 Hot house for the roma. I served it with moussaka and a pumpkin bread loaf from this site.

Green Pepper Tomato Salad

This was just great! I served it last week with dinner, and then again when we had company over. The compliments on this one just kept coming. REally nice blend of flavors.

Heavenly Chocolate Mousse

Reviewed: Nov. 22, 2009
I had been making a different mousse recipe for a while and came across this one. Thought to try it out for a change. The yolks definitely give it more body - which was a nice surprise. I also didn't have a candy thermometer, and did like another poster - trying to eye when it got custardy, seemed to work, but I was really nervous that I'd mess it up. I also, put it in the freezer for 5 min, stirred, put it back for 5 min, and stirred again - that definitely made it simpler - especially in the wee hours of the morning.

Chuck's Favorite Mac and Cheese

Reviewed: Nov. 26, 2009
This was great! Very creamy! The different cheese flavors blended well to give a nice taste to the palate. I used recommendations of adding 1/2 c milk and lessening the breadcrumb amount to 1/4 c. Will definitely be making again! Thanks!

Baklava

Reviewed: Dec. 8, 2009
I made this a few weeks ago for some Romanian friends who came to visit. I used sandra lee's suggestions of "draping the bottom half over the pan and then folding the top half over it, "painting" a thin layer of butter quickly," (it made it so easy!) and "cut to within a half inch FROM the bottom of the pan." After it cooled, it was a little tough to cut through with my only sharp utility knife, and I wasn't sure if I had spread enough butter on each layer, as the top didn't seem to stick as well as I had expected, but the final verdict was an "A+". Thanks so much NEONWILLIE for such a great recipe!

Applesauce Noodle Kugel

Reviewed: Dec. 17, 2009
This got a thumbs up from dh! I made the following changes as per other reviewers: 1. used 3/4c. red fat sour cream 2. reduced the sugar to 1 cup (reviewer said 1 1/4c, maybe less next time - it came out perfect this way) 3. used 3/4 c graham cracker crumbs (reviewer used 1 c.) and added my own changes as follows: 1. used crasins instead of the rasins 2. used 6 omega-3 eggs instead of the substitute 3. used juice from half a lime (didn't have lemon juice on hand) I also boiled the crasins with the noodles, as per a previous review, as well as put the crust mixture on top instead of below. was really yummy!

Quinoa and Black Beans

Reviewed: Feb. 8, 2010
This was a good main dish, however it was a tad bit on the spicy side for me, so next time I may use less cayenne pepper. I substituted 2 chopped plum tomatoes and used only 1 can of black beans, as dh is not a fan of corn or beans, plus I thought that 2 cans would be a bit too much for this dish anyway. I also added the beans with the tomatoes and let it simmer for a few minutes instead of waiting till the end to add them. DH seemed to like it and I will be making this again in the near future.

This was too time consuming and didn't work for me at all. Sorry, but I thought it would be better than it ended up.

Suki's Spinach and Feta Pasta

Reviewed: Apr. 26, 2010
Fast, easy, and had the ingredients on hand. This was a real delicious meal - loved how the pasta base mingles with the salty of the feta and the sharp of the red pepper (I didn't heat the cheese or pasta with the veggies b/c I made both regular and gluten free pasta to go with this). Definitely a keeper!
