Butternut Squash Soup II

This soup was very good. I cooked two minced garlic cloves with the onion, celery, etc. I added a pinch of dill weed and some hot pepper flakes to give it a kick. I only had two carrot sticks in the fridge, but it was fine with just that. I bought pre-peeled, pre-cut butternut squash, which made it easy.

Penne with Sausage and Broccoli Rabe

If we could give 1/2 stars, this would be 3.5 stars. We didn't use all of the red pepper flakes as I know it would have been too hot for us. I had some cherry tomatoes from the garden, so I cut them in half and threw some in. I wish I had added more. I think this was just missing something. It wasn't at all bad, but it didn't knock our socks off. Next time I might add some red bell pepper.

Oven Fried Parmesan Chicken

This was good, although I must've overdone it with the salt because it was extremely salty. I have a similar recipe using olive oil instead of butter. I think I'll stick with that recipe instead of this as it's a little healthier.

The Perfect Sunday Brunch Spinach Salad

This was really great. I'm allergic to nuts, so I skipped the pine nuts. I used Ken's light poppy seed dressing. I cut the recipe in half, since it was only 3 of us. I might add some mixed greens to the salad, with the spinach next time I make it.

Oven Roasted Potatoes

This is a great recipe and so easy! I used Italian seasoning instead of all of the individual items and then I added the dill weed and parsley. I added a little butter to them at the end.

Zesty Quinoa Salad

Wow, this was really good. I used white beans instead of black, because that's all I had and I didn't add any onions. Boyfriend doesn't like onion, but it was good without it. I used about 3/4 of the salt and cumin that the recipe called for. I love the lime and fresh cilantro. I did use two limes, although they were fairly small limes.

Mini Frittatas with Quinoa

These are awesome! I also added red bell pepper. I didn't have swiss, so used a mexican blend cheese that I had in the fridge. I would definintely make these again.

Chicken Parmigiana

If I could, I would give this 3 1/2 stars. It was good. I used salt n pepper and garlic powder on the chicken before breading. I added a little bit each of the following to the bread crumbs: parm cheese, salt, garlic powder, oregano and italian seasoning.

Chicken With Sweet and Sour Fig Sauce

This recipe was alot of work and created a big, big mess. I thought the flavor was good. Boyfriend didn't like it. I seasoned the chicken with salt, pepper and garlic powder before I mixed it in the batter. I won't make this again.

Janet's Rich Banana Bread

I liked this recipe, although I did make a few heart healthy changes. I used white flour and whole wheat flour. I used fat free sour cream mixed with some regular sour cream, lite butter instead of regular and I used white sugar and brown sugar. I did add a 1/4 teaspoon of cinnamon and added a few chocolate chips instead of walnuts, since I'm allergic to nuts. It was light and tasty.

Grilled Lemon Chicken

This was great. We loved the flavor. I used honey dijon mustard. I pounded the chicken thin and marinated it for 20 mins. I made broccoli Au Gratin rice a roni and fresh green beans. Great meal. Update: I made this again, but it was too cold and snowy to grill outside, so I just cooked the chicken in the marinade in a pan on the stove stop. It was pretty good.

Oatmeal Chocolate Chip Cookies I

We liked these cookies. I used 1/2 butter and 1/2 shortening. I used equal parts of flour and whole wheat flour. I added 2 tablespoons of vanilla extract and 1 tsp of cinnamon. Once I mixed everything, I added a little more flour. I cooked on a baking stone and it took much longer ... It took at least 25 mins. Halfway through, I increased from 350 to 375 because they did not look like they were cooking. I would make these again.

Garlic Cheese Chicken Rollups

I found this to be a little bland. I made my own filling by using cream cheese, fresh minced garlic, fresh parsley and a little fresh basil. I pounded the chicken thin, salted the chicken, dipped both sides in the butter and dredged both sides in the bread crumbs. I also added a little mozzerella to the filling. If I made it again, I would marinate the chicken overnight.

Crispy Chicken Parmesan

This was good and easy I didn't have the exact kind of croutons it called for, so I used a combination of Panko bread crumbs, Asiago Croutons and Caesar croutons. I added a little garlic powder to the mix too. I sprinkled a little salt on the chicken before breading. It was much healthier and less messy than frying. After I put the sauce and cheese on it, I put it under the broiler for a few mins.

Oven-Roasted Cauliflower

This recipe was good. The parm cheese addition at the end is important as it adds alot of flavor. Also, either my oven wasn't working properly, or it needed more time to cook. I expected it to be a little softer. I only used about 1/2 the salt, as it seemed like too much for my taste.

Turkey and Quinoa Meatloaf

This was okay. I didn't use Worcestershire sauce because I don't like it. I used a little browning sauce instead. I used barbeque sauce on top. I used 2 eggs and had no problem with it falling apart. As it was cooking I used a paper towel a few times to absorb the water/juice that was surrouning it so it wouldn't be mushy. I cut the leftovers into pieces and froze individually and will eat like a hamburger. I think with burger fixins it will be good. Update: I've defrosted the frozen leftovers and put on an english muffin and ate them as burger. They were much better.

Pork Chops with Raspberry Sauce

I followed the recipe except for using only 1 tablespoon of the white wine vinegar, as others suggested. It was good... something different. When I make it again I will try using the full amount of the white wine vinegar.
