Double Tomato Bruschetta

This bruschetta was delicious. I toasted the baguettes with a little mozzarella cheese first and then spooned over the bruschetta. I also added some onions to the mix, used sun dried tomatoes without oil because my store was out of the other and dried basil (got home without fresh.)I thought I would be disappointed without fresh, but it was really good! Will definitely make this again!

Slow-Cooker Posole

This is delicious. BUT make sure to use the Ten Minute Enchilada sauce from this website. It takes no time at all and tastes a thousand times better. No preservative taste! We ate this in tortillas with sour cream and cheese...

Szechwan Shrimp

This was really good and the sauce was amazing. I tripled the sauce but only doubled the red pepper. It was plenty spicy and we like spice. I also added green peas, carrot strips and fresh broccoli served over rice. I think I might try this with chicken too!

Aussie Chicken

This was really good and probably would have been better as written, but I wanted to make it a bit lighter. I brushed the honey mustard sauce over the chicken breasts, and topped it with the sliced mushrooms, bacon, and cheese and then stuck it in the oven for 30 minutes. I would place foil over it for a bit so the cheese doesn't burn. Very good taste this way!

New Orleans Corn Bisque with Smoked Sausage

This was absolutely delicious. I let the potatoes cook in the broth and left the sausages whole until the soup thickened up. They stay juicier this way! I will definitely make again.

Holiday Cranberry Chutney

This is really delicious and easy to make. I made this last year for a Thanksgiving appetizer and again this year. Last year I made this exactly as stated. I noticed it was a bit difficult to get the chutney on the cracker with the whole cranberries, so this year, I ran it only for a few seconds in the blender and it was still chunky, but easier to eat with cream cheese and a cracker. Everyone always loves this one no matter which way you make it!!

Baked Spaghetti

This was super good and had the flavor of lasagna. I did use italian sausage instead of hamburger meat and this is a must! It adds a ton of flavor! This is also really easy to prepare...

Award Winning Soft Chocolate Chip Cookies

I am not the best cookie maker and in fact had not made homemade cookies in years because of it! I tried this recipe and my students and husband were my guinea pigs. They really liked them! I was impressed I actually could bake cookies... I went with one of the reviewers suggestions and chilled the dough after I had made the balls and I think this helped so they didn't spread. I will definitely make these again! GREAT RECIPE!

This is so good and 5 star restaurant worthy. Costco has had bags of mixed seafood for the past few months. Since there are just two of us, we use half the bag and freeze the rest for the next time we make this. We have added the fish in the past, but it just broke into pieces and you couldn't really taste the difference. Everything else we keep the same, only changing the quantity. This is so easy to make and looks so impressive! Make sure you have a loaf of fresh bread to sop up the juice.

Chicken Cordon Bleu II

This was super good and the sauce was delicious. I substituted chicken stock for the wine, but wasn't sure if I should still put in the chicken granules. Still put them in. I didn't at first and it was quite bland. As soon as I added in the granules, it was perfectly seasoned! I also used 1% milk to save on fat and it was still creamy enough for us... So don't not make because of the fat content. Substitute!

Appetizer Chicken Kabobs

These were relly good. My husband was dreading another chicken night and when I served these, he loved them! I also put red onion on the skewers and then grilled them. I think I might use low sodium soy sauce although my husband said they were perfect just they way they were... Thanks for a great recipe!

Garlic Chicken

This had more flavor than I anticipated. I did use Italian bread crumbs and salted and peppered the chicken. I think next time, I will prepare the garlic/oil in a cast iron skillet and then bake the chicken in the same skillet so it gets crispier on the bottom.

Cajun Chicken and Sausage Gumbo

I made this after work one day and took the express route. I fixed it in about an hour. To save on time, I cut chicken breast into bite size pieces and cooked it in the pot. Overall this came out really great and had the "cajun" taste I was looking for. Instead of pepper and salt, I substituted Tony Chachere's. Very Good!!

Turkey Brine

I got so many compliments on my first turkey! I will never cook a turkey without brining again. I might put a little less salt next year, but that's personal taste as the whole family loved it. Also, the leftovers were just as good and moist. I grilled our 16lb turkey and brined for 24 hours and it took a little over 3 hours to finish. I also put a little butter all over the outside during the last 30 minutes or so of cooking to get the skin nice and crispy.

Kiki's Borracho (Drunken) Beans

These are good beans paired with fajitas. I used a giant can of pinto beans because I didn't have time for soaking, but used all other ingredients as listed. I added Shiner Bock for the dark beer and the flavor worked well. Very Good!

Dill Pickles

These are great. I actually made these a couple of days ago. I used mini seedless cucumbers and sliced some lengthwise and some in circles. I couldn't find fresh dill head so I only put the fresh sprigs in. I did add onion slices to the jar as well. Instead of doing the water bath, I inverted the jars and put a towel over them. The next morning all the jars had sealed except two. Those I put in the refrigerator and tried out today. They were delish after only a day or so! I can't wait for the others I put in the pantry. This is so easy to do for a first timer!
