Puffed Cauliflower Cheese

Reviewed: Jan. 3, 2009
This was ok as written but not great. I tasted it along the way after the cheese sauce was added and before the egg. It was really good. Something happened when I put the egg whites in and baked it. While it puffed, it had more of a cauliflower souffle taste. I'm not the best cheese sauce maker, but will use the cheese sauce from now on. Just No Egg.

Southern as You Can Get Collard Greens

Reviewed: Jan. 1, 2009
We didn't like these. It could be we just don't like collard greens in general because the recipe sounds like it should be great. You really can't go wrong with smoked hamhocks! To me, it tasted like cooked spinach... I ate a bit, but will stick to cabbage next new years'.

Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce

Reviewed: Dec. 22, 2008
I thought these were ok, but my husband, the corn dog lover, really enjoyed them minus the fiesta dipping sauce. If you want to save on calories, leave out the cheese. I couldn't taste it in them.

Sour Cream Pork Chops

Reviewed: Dec. 20, 2008
They were ok, but I thought they would be much better than they turned out to be.

This was really good. I followed the directions exactly! Great alternative to broccoli and dip.

Sunshine Chicken

Reviewed: Dec. 20, 2008
I did use chicken breasts as I'm not a big fan of chicken thighs. I don't know if it was just us, but there wasn't enough sauce to make it really flavorful. The only good part was the outside if the chicken. Needed something more.

Six Can Chicken Tortilla Soup

Reviewed: Dec. 20, 2008
This was really good, but I used real chicken cut up and the actual ingredient list and instructions don't say, but you need to put cheese and tortilla chips crunched up on top or it isn't the same. Also I used frozen corn instead of can. Great quick recipe that you can make your own with spices.

Slow-Cooker Posole

Reviewed: Dec. 19, 2008
This is delicious. BUT make sure to use the Ten Minute Enchilada sauce from this website. It takes no time at all and tastes a thousand times better. No preservative taste! We ate this in tortillas with sour cream and cheese...

Chocolate Cookie Buttercream Frosting

Reviewed: Dec. 11, 2008
This is really good. I don't like frosting or icing. I was making it for my husband who does. I actually really enjoyed this because it was light and not too sugary. I did add a bit more powder as we wanted a more chocolatey taste and more milk to make it smooth. We put it on a white cake.

The Best Bean and Ham Soup

Reviewed: Nov. 29, 2008
This was really good. I substituted Hot and Spicy V8 for the low sodium V8 juice. We like a little more spice. I couldn't tell with the other juices that I had even put it in. Next time I might also substitute diced tomatoes with green chiles to up the spice factor.

Holiday Cranberry Chutney

Reviewed: Nov. 29, 2008
This is really delicious and easy to make. I made this last year for a Thanksgiving appetizer and again this year. Last year I made this exactly as stated. I noticed it was a bit difficult to get the chutney on the cracker with the whole cranberries, so this year, I ran it only for a few seconds in the blender and it was still chunky, but easier to eat with cream cheese and a cracker. Everyone always loves this one no matter which way you make it!!

Salt and Vinegar Chicken

Reviewed: Nov. 22, 2008
This was good, but not Great. I marinated for one hour and baked. While the skin did get a bit crispy, and the chicken was juicy, the chicken wasn't very flavorful. I have definitely had better baked chicken. I probably won't make this again.

Juicy Roasted Chicken

Reviewed: Nov. 5, 2008
This is delicious and I actually slow cooked mine in a crock. As tasty as it is slow cooked, I'm sure it is even better roasted and can't wait to have the time to monitor it. I liberally sprinkled onion powder and salt and pepper inside and out. I also put more celery as I just filled the inner cavity. If you slow cook, put breast side down. It won't look pretty, but it will stay moister! UPDATE- I did this properly in the oven and my husband loved it! It was so crispy and delicious. If you could do this in a rotisserie- WOW!

King Ranch Chicken Casserole III

Reviewed: Oct. 30, 2008
This was really delicious. I followed the recipe fairly closely although I made changes along the way for personal taste. I used less chicken broth than suggested because I added it to the soup until it looked right. I didn't want it to be too soupy. I also just put enough tortillas on the bottom of the pan until it covered. I added the spices to the soup and just eyeballed it, but also included some extra spice. I put garlic and onion powder in most recipes. It does come out of the oven a little soupy, but if you can, wait the 20 minutes and it will firm up. I actually made mine the night before and then cooked it the next day and it came out great! I will definitely make this again :)

Easy Alfredo Sauce I

Reviewed: Jun. 30, 2008
This was really good sauce. We had our neighbors over and at the last minute I decided to make dinner. This went so quickly and tasted delicious. I was a bit nervous because I put all the ingredients in together per the directions and then read other reviewer suggestions of putting it in a bit at a time. Not a problem. I had microplaned the cheese so it melted easily. Use Fresh... I also added a dash of garlic powder and onion at the last minute. Oh. I ended up using half whipping cream and half "half and half" because it was all that was in the fridge. Still Great!

Sangria! Sangria!

Reviewed: Jun. 9, 2008
Delicious and Strong!! I used a wine "cube" of Cabernet/Shiraz. A friend of mine said a restaurant she used to work for used cabernet and it worked out great! I followed the recipe fairly accurately except I didn't have any o.j. so I left it out and I only added a teaspoon of sugar per batch. I didn't want it too sweet... Also as the carbonated water was optional, I had sprite out as a mixer and people could add however much they wanted for the desired strength. Everyone loved it. I suggest making a double batch:)

Best Ever Party Appetizer

Reviewed: Feb. 1, 2008
This dip is delicious. I did it a bit different in that I used soft goat cheese and folded all the ingredients in until it was a chunky dip. I also diced the garlic fine and used a bit less. I didn't have fresh rosemary so I gave it a sprinkle of dry. We ate it right away with Wheat Thins because I couldn't wait 6 hours. Super Good!

Double Tomato Bruschetta

Reviewed: Jan. 26, 2008
This bruschetta was delicious. I toasted the baguettes with a little mozzarella cheese first and then spooned over the bruschetta. I also added some onions to the mix, used sun dried tomatoes without oil because my store was out of the other and dried basil (got home without fresh.)I thought I would be disappointed without fresh, but it was really good! Will definitely make this again!

Super Moist Pumpkin Bread

Reviewed: Nov. 18, 2007
This was good but could be better. I made it exactly true to the recipe, but felt afterwards, I probably could have gotten away with putting all the dough in one bread pan. One was slightly smaller that the other, and was too done after having removed it from the oven early. I would definitely check it every so often because the second one came out great and I took it out about 25 minutes earlier than it said to. The second one was really moist and tasty... If you can't find the coconut milk, go to the alcohol section of the grocery where they have the mixers. I thought it was a strange place to have it and it took me forever to find.
