West African Peanut Stew
I made it into a vegan dish, tofu instead of chicken and veggie broth instead of the kind listed. Also I added a little more water and put all the ingredients into a slow cooker on low over night. I served it over quinoa also - first recipe ever that I ate the WHOLE thing. It sounds strange but it is good.

Vegan Portobello Stroganoff
I put a little more wine - and marinated it just in that. It was super tasty as is. Next time I would use garlic powder instead of minced because the texture of the minced garlic was weird to me. But flavor wise it was great.

Overnight Chinese Daikon Radish Pickles
Very bland. I added red pepper flakes, pepper and soy sauce which seemed to help.
