Baked Eggplant Parmesan

I made this tonight, and it came out fantastic! I didn't change anything, I just used the best ingredients I could get my hands on, and this is the best recipe for this I've tried yet. I think I'm done looking at others, this suited us fine.

Best Green Bean Casserole

i would have given it 5 stars had it used fresh green beans. just use fresh and steam them until almost tender, and the recipe comes out much better. you don't end up with that canned bean taste which i hate. also, adding some crunchy bacon bits adds to the flavor.

Spoiled Baby Back Ribs

excellent easy recipe, especially for winter in cold country, since it can be cooked indoors. i didn't need to change anything, but would suggest taking it a little easy on the apple cider vinegar. delicious!

Slow Cooker Enchiladas

i added quite of bit of ingredients to this recipe, and was very impressed with how "mexican" it tasted. some of the things i added: green chiles, jalapenos, fresh tomatoes, canned tomatoes with green chiles, hard tostadas (which was the best idea), and, almost 2 pounds of ground beef, among other things, some of which were not necessary. it was excellent, but i think i'll try it with chicken next time and i bet it's even better. very nice work, carrie! Follow up: made this again, with chicken. omitted the tortillas and used hard tostadas this time, since they soften up so much. added small cans of green chilis, jalapenos, and a can of diced tomatoes with green chilis, otherwise stayed with the recipe, and it came out absolutely delicious. so easy, the hardest part is frying the ground beef or chicken. if you need a mexican tasting hit for your palet, this is it!

Slow Cooker Italian Sausage Subs

i'm a HUGE italian sausage fan, having eaten it all of my life, almost every sunday, with spaghetti or ravioli, and i've got to give props to mr. evans for this recipe. easy, easy, and just downright mouth watering. grandma pasquale would have loved it!
