We have found a new favorite! As the potatoes were boiling, I discovered I was almost out of mayo. So I substituted ranch dressing instead, and we love it! I want to use Shurfine's Bacon Ranch Dressing next time. I'm sure the bacon flavor will add even more to this recipe.

Turkey Enchiladas

This recipe gets a thumbs up from me. After dealing with a "wild cats" situation and having to visit the animal shelter, I had this smell in my nose and didn't think anything turkey -- even enchiladas -- would taste good. I was wrong! These are good. I was lazier than this lady and made mine flat with the layers. It was great! And still good again today, as leftovers! Thumbs up!
