Haddock with Scallops

5 stars for my version (and I'm sure for the original version also). I didn't have crab meat - but I did have some large dry sea scallops - cut them into four pieces. Instead of white bread - I used Arnold herb seasoned stuffing mix. I didn't have Romano cheese so substituted Parmigiana. I did not use the egg. I baked the haddock (sprayed with PAM instead of butter) for 20 minutes at 350 and then added the stuffing on top for another 10 minutes. WOW!

Crab Stuffed Haddock

Spinach Souffle

An excellent basic souffle recipe - with a lot of opportunities for variations - I added some cheese - and put a little crumbled cooked Jimmie Dean sausage I needed to use up on the bottom of the dish. It was light, filling and delicious.

Apple Oatmeal Crisp

Served this to my P.E.O. sisters last night - it was delicious. Mixed Granny Smith and Macs - cut back on the sugar - increased the cinnamon a bit - added dash of lemon - AND added about 3/4 cup of blueberries - this was the kicker ingredient. Wow - first it looked beautiful and tasted even better -everyone wanted the recipe and it will go into my "make again" notebook.

The Old Boy's Strawberry Pie

A big hit on Father's Day. I lightened it up a bit - used Splenda instead of sugar - only 1/2 of the coating for the berries - Smart balance instead of butter. No sprinkles of sugar on the top. It was absolutely wonderful. Someone mentioned that it when they cut it, it was a mess. I let it sit about 4 hours and it held together beautifully.

Baked Oatmeal I

Followed reviewers' suggestions - less sugar (used Splenda) added drained canned peaches. Served hot with some yogurt on top. Bacon and cut up fruit on the side. My guest loved it and wanted the recipe.

Dutch Babies II

So happy to find this recipe - I had it over 30 years ago - after it came out of the oven I squeezed a lemon on it and then sprinkled with powdered sugar - served with fruit on top! Wow it is very impressive.

Pork Loin Stuffed with Spinach

Delicious! There is a lot of stuffing to get into the pork - I actually cut three pockets and this worked well, used all the stuffing and added extra flavor to each slice. Also added some goat cheese.

Chicken Stir-Fry

This is very tasty stir-fry - I used chix thighs - threw in veggies we had on hand -like green and orange peppers - added mushrooms and asparagus at the very end. Added some crushed garlic, 1 T of rice vinegar & 1 T brown sugar. My children love stir fry - but we've never had it this good - can't wait for them to come home and try this! I don't think you can ruin it - just go with your taste!

Amish Breakfast Casserole

Thankful for all the cooks that made this before me - wonderful suggestions - such as more eggs, mozzarella cheese, green peppers. I made my own shredded potatoes - only problem was that I made it the night before and some of the potatoes turned gray - didn't notice the color when it was cooked. Served 4 and there was a lot left over - could have served at least 8. Everyone wanted the recipe!

Avocado Pie

We were sent a doz very ripe avocados for Christmas - it was so much fun to use them in this recipe - which was yummy!! Plus the joy of telling everyone that we had avocado pie for Christmas! Made it exactly to the instructions - next time might try lime juice just to be different.

Winter Fruit Salad with Lemon Poppyseed Dressing

5 stars for the poppy seed dressing. Recipe worked well as a base for one's own creativity - you can't spoil this especially with the wonderful poppy seed dressing. The pears in the store were not ripe so I used strawberries - feta cheese - cashews and sliced almonds - mixed spring greens - used more apples than called for and did not peel. Not inexpensive - but great for a crowd - I was serving 17 - with corn chowder and yeast rolls everyone was applauding.

Grandma Johnson's Scones
