Walnut Pie I

Made this exactly as written, using a refrigerated pie crust (didn't have time to make my own). Easy and delicious! And it keeps remarkably well. Wonderful served warm with vanilla ice cream!

Rich Yogurt Waffles

I used melted butter instead of shortening, and full fat Greek honey vanilla yogurt. Sooooo fluffy and delicious! I topped these waffles with this: Melt ½ cup of butter in a frying pan, add 3 sliced bananas and cook until bubbly and slightly softened. Stir in 1 cup of pure maple syrup and a sprinkling of cinnamon, and heat through. Luscious, and replaces the usual butter + syrup.

Curried Coconut Chicken

This has become an instant favorite. I left out the garlic and onions since hubby won't eat those, but in my opinion, it would be even yummier made as written! One reviewer advised using SWEETENED coconut milk ... NO NO NO! The Thai coconut milk in a can is what you want, and it is not sweetened. You are adding sugar already ... to use the sweetened coconut milk would be just too much, I think. Anyway, GREAT RECIPE, as written!

Plain Cake Doughnuts

I made these as written, with just a bit more cinnamon and nutmeg, and rolled them in cinnamon sugar (also with a bit of nutmeg). Delicious!! Not nearly as heavy as cake donuts you would buy at the grocery store or even the donut shop. Light and fluffy! I will say that 375 degrees may be WAY too hot ... the "test strips" I fried turned black within seconds. However ... there is always the possibility that my new (and first) deep fryer is defective. The oil at 375 was smoking. When the oil cooled a bit, I continued frying and they were perfect. What a treat! I highly recommend testing the oil temperature with the scraps of dough that remain after rolling and cutting. And ... I had NO issues with sticky dough as some have experienced. It was very easy to work with.

Cranberry Cherry Pie

I made this as written, with homemade pie crust made, as suggested, with orange juice instead of water. The crust was the best part! The filling was, to my taste, lacking something ... it was essentially just two cans of fruit (cherry and cranberry). It wasn't bad, but didn't taste to me like either cherry OR cranberry. My husband liked it a lot, however, so ... four stars!

High Altitude Banana Chocolate Chip Cookies

Delicious! I live at an altitude of 5,000 feet, and made these exactly as written except for using a bit more banana (about 1 ¼ cups). They turned out great, although they did require a tad more baking time. It really depends on your oven. 375 was NOT too hot, and I found that about 13 to 14 minutes was perfect. They are cake-y cookies, and, as one reviewer mentioned, like muffin tops ... the perfect marriage of banana bread and chocolate chip cookies! Yum.

Meatballs with Greens and Noodle Soup

The flavor was good, but be aware ... this is really more of a pasta dish than a soup. One pound of pasta cooking in 4 cans of beef broth absorbs a great deal of the liquid. If I make it again, I would make the following changes: 1. Use (at least) six cans of broth, not four. 2. Cook noodles separately, adding a few bouillon cubes to the cooking water, and add the cooked noodles to each serving as desired. 3. Use half the recommended amount of crushed red pepper, or eliminate it altogether depending on your taste ... the meatballs were delicious but VERY spicy! I did prepare a double batch of the meatballs which are now in my freezer. I will try them with marinara sauce also.

Cocoa Cherry Pork

Absolutely DELICIOUS, and easy too! I do believe there is a typo in the original recipe. I made it with ONE CUP of cherry preserves, plus the ? cup vinegar. It was perfect that way, we were eating the sauce with a spoon! Otherwise, it would have been way too vinegary, AND not enough sauce for the recipe.

Blueberry Crumb Pie

Yes, it's not going to cut pretty. But ooohhhh, it's delicious! Made it just as written, with fresh berries. FYI, the measurements for lemon zest and juice are about the zest of one whole lemon and the juice of half of it.

Mock Lobster

Delicious! I marinated the chicken for a little over two hours, after cutting the breasts lengthwise in half (forming lobster tail-shaped pieces!). Longer may have resulted in its being too salty, given both soy sauce and garlic SALT (not powder). Dipping in melted butter is what takes this over the top! I think the marinade, possibly the pineapple juice, gives the chicken a hint of sweetness and a velvety texture, which brings lobster to mind. Loved this recipe and will be making it often!
