High Altitude Banana Chocolate Chip Cookies

Delicious! I live at an altitude of 5,000 feet, and made these exactly as written except for using a bit more banana (about 1 ¼ cups). They turned out great, although they did require a tad more baking time. It really depends on your oven. 375 was NOT too hot, and I found that about 13 to 14 minutes was perfect. They are cake-y cookies, and, as one reviewer mentioned, like muffin tops ... the perfect marriage of banana bread and chocolate chip cookies! Yum.

Meatballs with Greens and Noodle Soup

The flavor was good, but be aware ... this is really more of a pasta dish than a soup. One pound of pasta cooking in 4 cans of beef broth absorbs a great deal of the liquid. If I make it again, I would make the following changes: 1. Use (at least) six cans of broth, not four. 2. Cook noodles separately, adding a few bouillon cubes to the cooking water, and add the cooked noodles to each serving as desired. 3. Use half the recommended amount of crushed red pepper, or eliminate it altogether depending on your taste ... the meatballs were delicious but VERY spicy! I did prepare a double batch of the meatballs which are now in my freezer. I will try them with marinara sauce also.

Cocoa Cherry Pork

Absolutely DELICIOUS, and easy too! I do believe there is a typo in the original recipe. I made it with ONE CUP of cherry preserves, plus the ? cup vinegar. It was perfect that way, we were eating the sauce with a spoon! Otherwise, it would have been way too vinegary, AND not enough sauce for the recipe.

Blueberry Crumb Pie

Yes, it's not going to cut pretty. But ooohhhh, it's delicious! Made it just as written, with fresh berries. FYI, the measurements for lemon zest and juice are about the zest of one whole lemon and the juice of half of it.

Mock Lobster

Delicious! I marinated the chicken for a little over two hours, after cutting the breasts lengthwise in half (forming lobster tail-shaped pieces!). Longer may have resulted in its being too salty, given both soy sauce and garlic SALT (not powder). Dipping in melted butter is what takes this over the top! I think the marinade, possibly the pineapple juice, gives the chicken a hint of sweetness and a velvety texture, which brings lobster to mind. Loved this recipe and will be making it often!

Sweet Washington Cherry Pie

This is a delicious pie ... but don't expect it taste like other cherry pies. The sweet cherries are ... well ... sweeter! I used just slightly more than 2 cups of cherries (about 2 ½ cups) and that allowed me one nicely packed layer of cherries in the pie shell with no gaps. I might add a squeeze of lemon juice next time ... I think it might add that little something.

I had high hopes for this. It wasn't bad, but I'd prefer just strawberries and cream. It's also not especially attractive, although if you added red food coloring it might help.

Candied Chicken Breasts

Wow ... this was great! I made it as written, but didn't have pineapple to top it off with. (It was great anyway!) The sauce is yummy over rice! One note: It did not take an hour to bake, as others have mentioned. I'm glad I checked it after 25 minutes. I baked it uncovered for 25 minutes, and it was perfect. I also browned the chicken well beforehand so it was nice and crispy, and held up well in the sauce.

Bacon Cheese Puffs

Five stars from hubby ... I think I would have preferred it without the mustard. Next time ... thinking of adding crabmeat and eliminating the mustard! Yum! OR using RYE cocktail bread, Swiss cheese, and Corned Beef, with maybe sauerkraut in there too!

Creole Black-Eyed Peas and Rice

On the evening I made this, I would have given it about 2 ½ stars ... but the next day ... WOW! Very good .. it just needs time for the flavors to blend and mellow. By the way ... it was great with guacamole!

Almond Shortbread I

Delicious just as written! I used the "slice and bake" method rather than rolling them out. Sliced about ?" thick, baked in a convection oven at 300 degrees for 25 minutes (at high altitude) ... PERFECT. I rolled them in cane sugar while still warm. :)

Best Marinara Sauce Yet

Amazingly easy and good! My husband hates onions, so I left those out. I used crushed tomatoes instead of stewed, so that I could avoid the processor, and added a Tbsp. of brown sugar to counteract the acidity. (Stewed tomatoes include more sugar.) I am at a high altitude, so I cooked it all about 10 minutes longer. Just wonderful ... I'm happy to have this recipe!

Savory Chicken Breasts

The flavor was good, but I probably won't make it again. It was a little bland, and the chicken itself was rubbery in texture. I don't know if that was due to the cooking method, or the quality of the chicken breasts.

Creamy Peanut Butter Fudge

Good, but (and yes, I know it's candy) too sweet for my taste. It was like concentrated sugar. I would have liked more peanut butter flavor, and less cloying sweetness. It also did not set very well. I had to keep it in the refrigerator, and even then it was soft. That could be because I am at a higher altitude (5,000 feet), and perhaps should have cooked it for longer than 7 minutes. All that said, I enjoyed it anyway!

Fruity Curry Chicken Salad

Absolutely fabulous! I had never tried light mayonnaise before, and was worried about that, but I went for it and LOVED the result! I'll be making this very often. I ate leftovers for days and didn't tire of it. :)
