Lithuanian Krupnikas

I haven't made this yet, but just wanted to know if you can make it without boiling the honey, just adding it directly to the mixture as it is my understanding that heating honey ruins any of the medicinal qualities that honey has. Has anyone tried making it without boiling the honey or think it would work out okay to just add it without heating? PS, I'm just rating this as how desirable it sounds so I can post my question. Thanks for any input.

Apple Strudel Muffins

Just made them---yummy! I used granny smith apples and coarsely chopped them so you get a good bite of apple in each muffin. I made a few changes too, added cinnamon and nutmeg to the batter, also nutmeg to the topping. I also used half and half whole wheat and white flour and cut my sugar to half in the batter. With the topping, it was plenty sweet enough and I don't like overpoweringly sweet things. I find a lot of times you can cut the sugar and it tastes fine (or maybe even better). Next time I'm going to add walnuts. I made these for gifts but I'm having a hard time staying away from them myself!

Pumpkin Cookies I

So yummy! I did a few twists; I used half whole wheat and half all purpose flour, used butter, brown sugar, and spiced them up with cinnamon, nutmeg, and allspice. I had some white chocolate chips and use some of both butterscotch and white chocolate. After baking, they were a little delicate, but I found that I could crisp them up by turning the oven off and returning them on cookie sheets to sit in the oven as it cooled. That seemed to give them a more crispy, less cakey texture. I think these are going to become a family favorite; a great autumn recipe!
