Asian Chicken Salad

Delicious. Used chicken breasts seasoned with pampered chef Asian Seasoning then grilled and shredded. Added mandarin oranges, shredded carrot, diced celery, and water chesnuts, and subbed the chow mein fred noodles in a can rather than fry my own (tasty and easier!) Served over fresh baby spinach. I think the sesame oil in the dressing is a must - added great flavor. Excellent versitile recipe!

Cinnamon Pumpkin Waffles

no idea why, but the first batch was burned on the outside and complete dough on the inside; the second batch I tried to lower the heat setting and bake them longer...they looked good but were still complete dough. I know it isn't my waffle maker's fault because I made a different recipe and those turned out great, so something went wrong with this recipe!

Lentil and Sausage Soup

make this soup all the time and I love it!! It is just as good as Carrabba's :) I use hot Italian turkey sausage (healthier!) and add a little crushed pepper to kick it up a notch. I also use all chicken broth instead of water. It's a very filling, very flavorful, and very healthy soup! Oh, and I've never cooked it for 2.5 or 3 hours....1 hour or so seems to be plenty!

Mushroom Pork Tenderloin

Very easy and tasty. added some chopped onion with the mushrooms, and used thyme and oregano in place of marjoram. Also used chicken broth + cornstarch for the gravy instead of water + flour.

Butternut Squash Soup

only changes I made was to slice the squash in half and bake in the oven first (350 for about an hour). Also used butter instead of margarine (and about 1T instead of 4T). Didn't have marjoram so I used oregano. Also used only 6 oz of low-fat cream cheese (can't imagine using 2 whole packages!) It was still VERY thick and creamy. Delicious!

Peanut Sauce I

Used rice vinegar, soy sauce, and brown sugar/honey as substitutes for some ingredients. Tasted good, but was better after adding a little garlic, onion powder, and ginger.

Classic Bran Muffins

Delicious and healthy! Made a few changes based on what I had on hand - Substituted one cup of low-fat plain yogurt for the buttermilk, replaced half of the oil with applesauce. Also used whole wheat flour in place of all-purpose, and dried blueberries instead of raisins. Added a dash of cinnamon. Yum!

Chocolate Chip Orange Zucchini Bread

this is reeealllly tasty! the only changes I made was to use hershey's special dark chocolate chips instead of regular semi-sweet, and I used hazelnuts in place of walnuts. I also make sure to peel my zucchini before I grate it so that people aren't thrown off by seeing green pieces in their bread.

Easy Cajun Jambalaya

I added/changed some things, which made it 5-star: added one can of fire-roasted diced tomatoes and added some shrimp, as well as a bit of dried thyme and oregano. Without these things I think it would have been lacking a bit in flavor. I also used andouille sausage instead of kielbasa. . It was my first time making jambalaya and my husband said it was one of his favorites!

Cream of Broccoli Soup III

Very good for being so healthy! I added a potato, a little lemon zest, a pinch of dried oregano, a bay leaf, and some fresh parsley at the end. I also kept some of the veggies whole and pureed the rest so it'd be a little chunkier. Yum yum!

Mayo-Free Tuna Sandwich Filling

delicious! I never thought of mixing hummus with tuna...I had just made some homemade hummus and had the fresh herbs on hand - so tasty and healthy! I did skip the chile pepper and added a little celery for crunch.

Maui Martini

After vacationing in the caribbean, this sounded like just what I wanted. However, it was a little too strong for my tastes. I added some pineapple juice to mellow it out enough to enjoy; in the future I would leave the vodka out and substitute the same measurement of pineapple juice.

Momma's Wheat Germ Cookies

I scaled the recipe in half (and swapped chocolate chips for dates), and the first batch turned out terrible - I thought the dough looked too "creamy" but thought I'd try it anyway; they flattened out into a chewy-fall-apart pancake. Tasted good, but didn't look good at all. I added probably a 1/4 to 1/2 cup more flour to the dough I had left, and the next batch turned out beautiful and delicious. Wish I would have followed my instincts with the first batch! After I adjusted it they were great!

Health Nut Blueberry Muffins

I made a few changes - 1/2 C br. sugar instead of 3/4 white, T of applesauce in place of oil, didn't have oat bran on hand so used wheat bran instead, and used 1 C whole wheat flour and 1/2 C white flour. Most of these changes make this recipe just a tad healthier than it already is, and they turned out delicious! I might like them a little sweeter, so I might stick to the 3/4 C sugar instead of the 1/2 C br. sugar I tried this time around.

Moroccan-Style Stuffed Acorn Squash

I'm not sure what it was...but this was just okay. The filling just tasted like couscous and cumin - nothing else. And it was a strange combo with the sweetness of the squash/butter/brown sugar. Not the best way to eat acron squash, but worth a try if you love the taste of cumin.

World's Best Lasagna

This lasagna is delicious. The time it takes to make the sauce is worth it. I actually used lean ground turkey and hot turkey sausage and it was fantastic (and healthier!) I also made two smaller pans of it and froze one of them. It baked up beautifully a couple weeks later!
