Cheesy Chicken Meatballs

Reviewed: Aug. 28, 2010
So delicious! I subbed laughing cow garlic and herb for the cream cheese, olive oil for the veggie oil and added slightly more bread crumbs and they came out fanastic! The chicken mixture is very sticky as others have said so I used 2 soons to get it to the baking sheet. A little tip: if your meat balls are all wonky looking just spray your hands with a little cooking spray and reshape once they are on the baking sheet. Works like a charm!

Tuna And Bean Salad

Reviewed: Aug. 30, 2010
I really loved this! I was looking for a lighter alternative to the usual tuna salad with mayo. I did make some changes simply because I didn't have the ingredients. Didn't have cheese and didn't have green beans but kept everything else as is except used about 1/2 the oil. Very good and I will definitely make again!

Easy Italian Chicken II

Reviewed: Nov. 27, 2009
I was shocked with how favorful and juicy this chicken was! I added mushrooms as another reviewer suggested and kept everything covered in the oven until the last 10 min. or so. The leftover chicken and mushrooms were excellent eaten cold for lunch the following day!

Megan's Granola

Reviewed: Mar. 16, 2009
I really love this granola! I made a few changes just because I didn't have all the ingredients. Used the amounts called for for oats, wheat germ, walnuts, almonds, oil, brown sugar and salt but olitted the maple syrup (didn't have any) and instead used 1 cp honey. I also used 1 tbs cinnamon and 1 tbs vanilla. Baked at 300 for about 30-35 min stirring every 8-10 min so it wouldn't burn and it turned out fabulous! After granola cooled I added a combo of dried cherries, blueberries and raspberries. I will definitely make this again!

Banana Oatmeal Bread

Reviewed: Feb. 23, 2009
I LOVE this bread! It tastes like a traditional banana bread but the texture is what makes it stand out! Very moist and hearty! I used 3 large bananas (I like a definite banana flavor), substituted 1/2 unsalted butter and 1/2 plain applesauce for the shortening (didn't have shortening on hand) and added 1 1/2 tsp of cinnamon instead of 1/2 tsp. Left the rest the same and cooked for 55 min. The edges of the bread did start to get dark around 40 min. so I covered with foil for the rest of the time. Next time I may nor cover because I like a little crust. This is AWESOME bread!

Jo's Rosemary Bread

Reviewed: Aug. 25, 2010
Delicious! Mine turned out a little dense but I think that's because I started late and had to cook on the fastest speed on my breadmaker. I did as another person suggested and added less rosemary (2 tsp) becase of my kids and it was still so aromatic. Thanks for the great recipe!

Slow-Cooked Chili

Reviewed: Nov. 27, 2009
This chili was so good! Not spicy at all so my 3yo was able to eat it. The only change I made was to add a little spaghetti sause to thicken it a bit in the end. Only half a jar I had left over. I loved it and will defintely be making this again.

Jewish Coffee Cake

Reviewed: Feb. 23, 2009
This was very good. I did what other reviewers did and used brown sugar instead of powdered sugar. I also doubled the amount of brown sugar mixture (and added a little butter)because I like a nice thick inner layer and crumble on top. It is a little hard to spread but once it is in the oven it all evens out. Thought this was great and will definitely make this again!
