Chocolate Chocolate Chip Cookies I

Really great recipe! My husband is French and finds traditional chocolate chip cookies lacking (we disagree on this!) but he LOVES these. I followed another reviewer's suggestion and used half white sugar and half brown. And then I also used half white chocolate chips and half chocolate, just to be fancy! They are GOOD!

Sesame Peanut Noodle Salad

This is a really easy and tasty dish! I cooked the recipe for 8 servings, but only used 1 pound, not 2, of pasta. I guess the sauce would be a bit more dispersed over more pasta, but I really liked it a bit more intense. I also used wholewheat pasta instead of egg, and threw in some green onions and just a touch of Thai chili sauce. The wholewheat pasta added a nice earthiness. The only other changes I made was to use chunky Jiff peanut butter (so killed sugar) and a couple Tablespoons more soy sauce. This will be a regular in my house!

Mediterranean Barley Salad

I've been looking for more ways to include healthy grains into my family's diet, and this salad worked perfectly as a side. It was yummy, satisfying, and easy to make! I'm going to have the leftovers for lunch today. I didn't change anything, although the olives I bought at the deli were marinated in olive oil and mixed with pine nuts which was a nice addition to the salad. I might add some chili pepper flakes next time, just to give it a little kick.

Linzer Tarts

These are really fabulous - very Christmasy! I did have trouble with the dough, but followed what the other reviewers said and kept chilling the dough whenever it became too soft (in between rolling out, and before removing the centers from the cutout cookies!). I used a combination of ground almonds and pecans, as that's what was on hand and they turned out fabulously. To get the nuts ground into a powder, I cleaned out my coffee grinder! Would definitely recommend this, as it made for a nice smooth dough. The cookies still do come out very delicate. I would definitely recommend only rolling them to 1/4 inch thin, as any thinner and they fall apart. Will definitely be making these for Christmas cookie gifts!
