Swanson® Heart Healthy Chicken Sandwich

I was pretty skeptical about the yogurt, but it was really quite good. My other recipe calls for mayo and cream cheese, but I think I'll use this one at home from now on. I boiled up a chicken breast instead of using canned. I also added a dash of Beaumond seasoning and threw in a few cashews.

Real Hummus

At first taste this turned out AWFUL, but I'm not sure it it was the recipe or not. I think I had some not so great Olive Oil, but I could also taste a little too much of the Tahini. I salvaged it by adding some onion powder, coriander and cilantro. After that, it was AWESOME!

Easy Cheesy Scalloped Potatoes

I made this in a slow cooker. It only took 2 hours on high. I think it would turn out better in with a nice crisp top in the oven, but it was perfectly fine in the slow cooker. I also added chopped onion and a bit more potato than called for. Very nice, the whole family enjoyed this.

Grandma B's Bean Soup

Overall I was very pleased with this recipe, although the first time I made it I took some users advice to add chicken broth instead of water, and I found mine entirely too salty, even with the broth watered down! I'd recommend to wait and see if it needs any additional seasoning first.

Whole Wheat Blueberry Pancakes

I was very impressed with this recipe. They are light, fluffy and soft. Not heavy and dense like you would expect from whole wheat. I did find that I liked them a little better with an added TBS of sugar, but they would be fine without for those who want to cut back.

Cream of Cauliflower Soup I

The only reason this is not rated higher is because I really did not like the tarragon/thyme seasonings. That is probably just personal preference, but it really put me off to the point that I didn't even finish the bowl. That said, the taste and texture of the soup without those herbs was very, very nice. Because of some of the reviews and to save myself a shopping trip, I used 1 can of evaporated milk instead of milk and cream and about a third of the amount of swiss called for. Evaporated milk is very nice in soups like this, but I bet it would also be good with the heavy cream. I think the soup will be much more enjoyable with a different blend of herbs and I think I might experiment with cheddar cheese as well. It is a good recipe that I will definitely we trying again with revisions.

Pizza Dough I

It is a little more dense than your average pizza crust, which can be good as far as flavor and texture if you prefer that. My Husband does and he loves this recipe, however I found that the dough is so thick and dense that it is really hard to work with compared to other recipes I've tried. It takes me 2 or 3 times longer to work this dough out to make a crust. It is a good recipe and I will probably make it now and then because my husband loved the flavor so much, but it will not be my regular recipe.

Mexican Cornbread Salad

I was sick of bringing the same old side dishes to pot lucks. This was the perfect cure. It was delicious! Many of those who tried it loved it. Lots of people were hesitant, because they just didn't know what it was. It does make A LOT. I brought it to a pot luck BBQ with over 20 people and half of the recipe would have sufficed.
