Sunshine Toast

We call it egg-in-a-hole, and I have perfected the art! First, it helps to cook on a low heat and cover with a lid to cook the egg without burning the bread. Also, I sprinkle salt pepper and Season-all on the raw egg side. Second, after you flip the bread to cook the other side, sprinkle a little cheddar cheese on the cooked side and cover again and allow cheese to melt while the other side cooks. Hope you love the suggestions!

Oat Bran Bread

This bread is TOO GOOD for how easy it is! Made it all in the machine, added about 1/8 c more bran/flour while it was kneading. It got sticky. Used 2 T yeast, tad bit more salt. Didn't do anything tricky, and it turned out PERFECT! AMAZING! My husband says it's better than anything his mother has made! That's a win! This will definitely become a staple in our house!

Holiday Cranberry Chutney

Truly amazing! I serve with fave crackers and cream cheese, oh who am I kidding? I eat it with a spoon until it's gone! Only changes, I reduce sugar to 3/4 c, it helps to reduce guilt when eaten with a spoon, and add the zest of 1 orange. Delicious!

Thai Pumpkin Soup

I can't honestly rate this as written, but what I made was a definite 5 in my house! As is customary in many reviews, here is my version, changes only: (omitted red pepper and lemon grass) 3 cloves garlic, 1/2 sweet onion subbed for shallots, 1 can chicken broth, 1 can LITE coconut milk, 1 tsp. ginger paste from the tube (in the fresh herbs produce section) and added 10-15 cooked shrimp. Also, allow to salt and pepper to taste. And my #1 secret??? I used 3 1/2 c pureed fresh sweet Hubbard squash, bright orange in color, and it was fresh and amazing! Truly a blend of my favorite Thai soup with a fall pumpkin taste! What an amazing soup!

Bacon Ranch Pasta Salad

Great salad! Make night before to let flavors blend and mellow nicely. Add tomato before serving to preserve salad. Other than having no nutritional value besides the one tomato, this was an excellent and mighty delicious salad!

Buffalo Chicken Dip

Made it for the game today, my small group of 5 polished off this HUGE serving by the end of the game! Everyone was RAVING! This recipe could easily be halved if needed. It does make a large portion and the oils separate so it doesn't reheat well...if it lasts that long.

Savory Garlic Marinated Steaks

I think I would like parts of this marinade, but as a whole I did not like the flavor at all. It smelled fantastic, but it was too sweet and the sweet/savory combination was not good. I think the balsamic vinegar and the honey is what I would take out and then I'd try the marinade again.

Hot Chocolate Mix II

This recipe is in serious need of at least 1 cup of cocoa powder or more. Not very chocolatey at all without it. With that, it's quite yummy.

Pumpkin Pancakes

I also added 1/4 c whole wheat flour(subbed in for white) and 1 T Rum (brandy would work too) 2 eggs, and a tsp of vanilla, and FRESH ginger paste. AMAZING! Hubby says it's like pumpkin pie, ginger cookies and really yummy pancakes all in one bite!

Peanut Candy Bar Cake

Um freaking AMAZING!But very sweet, very rich. After one bite, my husband got that shocked "OMG this is SO AMAZING" look...but you can't eat much more than one bar without a sugar coma! I added about 1/3 c peanut butter to the sauce before adding peanuts and crisp rice. Very gooey and very rich. Also very fast and easy to make!

Oatmeal Peanut Butter Cookies

Dry, but it was probably my fault. I subbed some of the sugar for splenda, which always dries things out, and forgot to compensate in the flour. Definitely didn't satisfy my craving. And DON'T OVERCOOK. Cookies were so dry they fell apart in my ziploc bag just sitting on the table.

Banana Sour Cream Bread

Wow, it doesn't get any better than this! Except if you like more cinnamon and nutmeg in the actual bread, but it was the most moist, delectable banana bread I have ever had, and I HATE banana bread!
