Chef John's Pumpkin Pancakes

This was a decent pancake, but I thought the lemon zest over powered the pumpkin and spice, I will probably go back to a different recipe that I used previously.

French Dressing II

This is amazing! I used both Worcestershire and the smoke, and adobo instead of celery seed and green onions- so much better than the bottle! Oh, I also added extra vinegar to tone down the sweetness. I am going to definitely use this again!

Best Big, Fat, Chewy Chocolate Chip Cookie

Yeah, these are really that good. You have to follow the recipe to a t though. I tried to halve it the second time with poor results. Te first time though, I took them to work and they disappeared in minutes!

Ham with Redeye Gravy

I had red eye gravy last night for the first time at a local restaurant. It was served over shrimp, grits and andouille sausage. It was one of the best things that I have ever put in my mouth! I set out to replicate it this morning and was very pleased with the results. Being a pseudo-southerner who was raised on milk gravy, I was not too Concerned with authenticity. I used butter instead of oil, smoked sausage instead of ham, thickened it with flour and added hot sauce and pepper for a little kick. It was soooo good served over grits and sausage with a little shaving of Parmesan over the top!

Awesome Sausage, Apple and Cranberry Stuffing

I grew up on cornbread dressing, but wanted to try something new several years back. This stuff is like crack! It gets eaten up very quickly because most people go back for seconds or thirds. I have been making this for several years now and this will remain my go-to stuffing recipe. I leave out the liver and bake it in the oven- don't stuff the turkey because we buy a smoked turkey from a local church. It is soooo good! Also- this can be easily made gluten-free-I just used a gluten free loaf of bread.

Cheesy Jalapeno Corn

I use less butter and just make a classic rue and then melt the cream cheese into that. Be careful taking this to family functions though, they will expect you to bring it every time!
