Curried Coconut Chicken

This was delicious. I made slight modifications, because I like mine extra spicy! First, I cooked the curry in olive oil for five minutes, then I added onion and cooked for ten minutes. After that, I added an 8 oz can of tomato paste and 4 oz water, and then cooked the chicken for 5 minutes in the curry / tomato mixture (I also added fresh ground salt and pepper). I then added the coconut milk, fresh chopped jalapenos (2) and 2 chopped bell peppers (red and green) and let it simmer for 30-40 minutes. I served over jasmine rice. It was spicy and delicious!!! We had leftovers, and I was craving them the next day! Great recipe. Will make again and again.

Quick Sticky Buns

These were pretty good. I didn't have the right kind of syrup so I used pancake syrup instead, which worked out just fine. Also, if you use the 'Grand' biscuits, like I did, then increase your cooking time by 5 minutes, otherwise the biscuits will still be too doughy.

Best Ever Spinach Artichoke Dip

Substituted sour cream for alfredo sauce. Not much flavor to this dip. Next time will add some spices -- maybe some garlic, worcestershire sauce, etc.

Grilled Bacon Jalapeno Wraps

We don't use toothpicks. We cook these on a broiler pan in the oven at 400 for about 35-45 minutes(with the bottom pan lined with foil for easy clean up). Using the broiler pan ensures the jalapenos don't end up swimming in bacon grease. Also, try putting honey on the bacon before wrapping the jalapeno - it adds a nice flavor! My sister didn't know about the honey and kept asking me what kind of bacon I was using, because the flavor was so good.

Buffalo Chicken Dip

Delicious, and you can adjust the heat to your liking. Try fresh cooked chicken instead of canned, as the dip turned out a little too salty. Also, better served with chips than with the chicken flavored crackers.

Classic Macaroni Salad

Got lots of compliments on this macaroni salad and will definitely make again. I left out the carrots. Also, if you don't like the taste of vinegar, you might want to decrease the amount called for by the recipe. The vinegar taste was a bit strong. This is the only reason I didn't give it 5 stars.

Sausage Balls

cooked at 350 for 30 minutes. mixed the sausage and biscuit mix first, then folded in the sharp grated cheddar cheese. baked on parchment paper and didn't experience any grease. would be good with a couple of chopped fresh jalapenos added to the mix.

Christmas Creamy Egg Nog

excellent. I've never had egg nog before and this was great. Wasn't as thick as my husband would like. Use the Bacardi Gold Rum. We used 4 oz instead of 1 as the recipe had indicated. Also used the organic free range brown eggs, which are richer than the regular white eggs. Will make this again.

Slow Cooker Chicken Taco Soup

This one's a keeper. So easy. and delicious. Substituted chicken broth for the beer. Added 1/4 cup of taco seasoning mix and 1/4 cup of ranch dressing mix. Also used pinto beans instead of chili beans. Cooked on low for 8 hours. Chicken easily shredded at the end of the cooking time.

Excellent! Halved the recipe. Used taco seasoning on the meat. Used 2 to 3 tortillas at each layer. Next time I'll use more cheese!
