Cajun Style Stuffed Peppers

Simplified this recipe since I'm a working mom. Made the jambalaya mix in a box from the store. Added sausage and frozen shrimp. Topped each stuffed pepper with cajun sauce before baking. Did 2 green and 2 yellow peppers. Next time will do all green. Everyone loved this recipe. Will make again!

Mom's Coleslaw

modified recipe a bit. Started by shredding a small head of cabbage and two carrots in my fod processer. Reduced mayo (used miracle whip instead, because that's what I had) to 1/3 cup. Used 1/4 cup apple cider vinegar. And added a tablespoon each of cracked black pepper and celery salt. Overall, simple and delicious. A real keeper! Goes great with North Carolina style pulled pork recipe on this site!

North Carolina-Style Pulled Pork

Delicious! We have an electric smoker and smoked a 9 lb picnic pork shoulder at 225 degrees for 6 hours (until internal temp reached 160 degrees). After 5 hours of smoking, we took it out, put it in foil and put it back in the smoker for an hour. Don't forget to take off the fatty skin before putting the rub on!

Bleu Cheese Macaroni

Yummy! A real keeper! Made the following modifications: omitted the salt and pepper during the cooking process; put 1/2 each of a red and green bell pepper in the food processor and finely chopped; increased the cream to 1 and 1/4 cups; decreased the amount of flour to 1/4 cup; used 1/2 cup of blue cheese, 1/2 cup of parmesan cheese, and 1/2 cup of shredded swiss cheese. Delish!!!

Excellent! Halved the recipe. Used taco seasoning on the meat. Used 2 to 3 tortillas at each layer. Next time I'll use more cheese!

Slow Cooker Chicken Taco Soup

This one's a keeper. So easy. and delicious. Substituted chicken broth for the beer. Added 1/4 cup of taco seasoning mix and 1/4 cup of ranch dressing mix. Also used pinto beans instead of chili beans. Cooked on low for 8 hours. Chicken easily shredded at the end of the cooking time.

Christmas Creamy Egg Nog

excellent. I've never had egg nog before and this was great. Wasn't as thick as my husband would like. Use the Bacardi Gold Rum. We used 4 oz instead of 1 as the recipe had indicated. Also used the organic free range brown eggs, which are richer than the regular white eggs. Will make this again.

Sausage Balls

cooked at 350 for 30 minutes. mixed the sausage and biscuit mix first, then folded in the sharp grated cheddar cheese. baked on parchment paper and didn't experience any grease. would be good with a couple of chopped fresh jalapenos added to the mix.

Classic Macaroni Salad

Got lots of compliments on this macaroni salad and will definitely make again. I left out the carrots. Also, if you don't like the taste of vinegar, you might want to decrease the amount called for by the recipe. The vinegar taste was a bit strong. This is the only reason I didn't give it 5 stars.

Buffalo Chicken Dip

Delicious, and you can adjust the heat to your liking. Try fresh cooked chicken instead of canned, as the dip turned out a little too salty. Also, better served with chips than with the chicken flavored crackers.
