Cooked it a bit longer than recipe called for. I wanted to be sure it was done in the middle. Everyone loved it! note: only needed to buy one bag of croutons for this recipe and still had some left over.

Yum! I substituted 1 1/2 cups of pepperidge farm stuffing for the bread and onion powder for the onion. Was so easy and delicious and moist...a keeper recipe.

Banana Crumb Muffins

Good, but not sweet enough for me. Added brown sugar and chopped pecans to tops of muffins before baking and this improved them. Also, made mini muffins - 1/2 of the recipe made 20 mini muffins (baked for 15 minutes). Will definitely make again but with the slight modifications.

Cottage Cheese Chicken Enchiladas

Very good enchiladas. Used two cans of enchilada sauce, flour tortillas instead of corn and a rotisserie chicken from the grocery store. Next time will make a few changes: will use corn tortillas (flour ended up a bit soggy by day 2); will cut down on amount of taco seasoning in the chicken, will place cottage cheese / sour cream mixture in food processor (didn't give a very nice appearance); and will use spicy enchilada sauce (just a preference). May also try making these with the verde enchilada sauce. Very versatile recipe and very good!
