Charleston Breakfast Casserole

Cooked it a bit longer than recipe called for. I wanted to be sure it was done in the middle. Everyone loved it! note: only needed to buy one bag of croutons for this recipe and still had some left over.

Yum! I substituted 1 1/2 cups of pepperidge farm stuffing for the bread and onion powder for the onion. Was so easy and delicious and moist...a keeper recipe.

Banana Crumb Muffins

Good, but not sweet enough for me. Added brown sugar and chopped pecans to tops of muffins before baking and this improved them. Also, made mini muffins - 1/2 of the recipe made 20 mini muffins (baked for 15 minutes). Will definitely make again but with the slight modifications.

Cottage Cheese Chicken Enchiladas

Very good enchiladas. Used two cans of enchilada sauce, flour tortillas instead of corn and a rotisserie chicken from the grocery store. Next time will make a few changes: will use corn tortillas (flour ended up a bit soggy by day 2); will cut down on amount of taco seasoning in the chicken, will place cottage cheese / sour cream mixture in food processor (didn't give a very nice appearance); and will use spicy enchilada sauce (just a preference). May also try making these with the verde enchilada sauce. Very versatile recipe and very good!

Chicken Puffs

Yumm!! The only thing I changed was to cook them a bit longer than the recipe called for. I found that mine were still a little doughy and needed a bit more cooking time. Good, easy dinner any night of the week.

Cream Cheese Jalapeno Hamburgers

"Best Hamburger I've ever had!" That's what my husband said about these. Didn't change anything about the recipe, but did add some Emeril's hamburger seasoning to the tops of the patties before cooking them. It was raining so I put these under the broiler for about 5-7 minutes on each side. Ate these with nothing but a bun and some bacon. Can't wait to make again!!

Christmas Breakfast Sausage Casserole

Great recipe! Husband loved it. Cut my recipe in half since there are only three of us -- doubled the amount of eggs called for by the recipe. Also, didn't mix it all together as suggested by the recipe, but layered it -- bread, sausage, cheese, egg mixture. then 15 minutes before done, added more cheese to the top. Can't wait to make again!

Banana Sour Cream Bread

Yummy! I cut the recipe in half because I didn't want that much bread -- it made one large loaf and one medium size loaf. For the sugar, I used half brown, half white. Used one egg and just added an additional banana. Also, need to bake a bit longer, it was still mushy in the middle. Overall, loved it! Husband loved it! Will make again. Thanks for a great recipe!!

Mom's Zucchini Bread

Delicious! I was craving zucchini bread and this was perfect. Only substitutions: used half cup of apple sauce and half cup of vegetable oil instead of one cup vegetable oil; used one cup of white sugar and one cup of brown sugar, instead of two plus cups of white sugar; and used three cups of grated zucchini. Next time will cut the recipe in half as it made two loaves. Oh, and two large zucchinis yielded four cups.

Grilled Salmon with Habanero-Lime Butter

Very Good! Next time I will do a couple of things differently. Will cook the salmon on a cedar plank, and also noted that it takes a lot of those little habanero peppers to equal a tablespoon! So, next time will buy more of them for this recipe. The butter was a nice touch. I couldn't get the lime juice and the butter to mix, so I melted it, then let it reset in the refrigerator. Overall, great recipe!
