Apple Pie by Grandma Ople

I make this pie a few times, every year, for the holidays. The only tiny thing I do different, is that I shake the apple slices in a bag with some cinnamon, before assembling the pie.

Cranberry Sauce

I am not a big fan of cranberry sauce, but my family likes it, so... it has to be done. I just can't bring myself to try the can-shaped thing, so I tried out this recipe a few years ago. It is pretty good, and family likes it, so it is a win. The only thing I do differently is that once the sugar is dissolved, I turn the heat very low, and let it cook slowly for about an hour. I check on it every 5-10 minutes or so, to stir and smoosh the cranberries. It's also one of those things you can make a few days ahead, to alleviate the cooking load on the actual holiday.

Bread and Celery Stuffing

This is the same basic recipe I've been using for years. The only difference is that instead of leaving the bread out for a couple hours, I toast the bread cubes in the oven, in batches, to firm them up. This helps keep it from getting soggy. I also mix it up and use a combination of white bread, sourdough bread and sometimes french bread. I double the recipe and cook half of it by itself, and half inside the turkey. I think this year I'll use the crock pot for the non-turkey batch, to free up space in the oven.

Spicy Avocado Chicken

I made this last night, and we loved it. I do agree with the other reviewer who mentioned that the onion to avocado was a bit of an "off" ratio, so I was careful to keep an eye on that. I halved this recipe since I was only cooking for myself and my husband, so I used one avocado and about 1/3 of the onion. So, if I were to make this with four servings, I would probably want to use two avocados, and maybe one very small red onion. Shallots would also taste great in this recipe. I also added a little bit of garlic salt, just a personal taste. I'll definitely be making this again.

Traditional Gyro Meat

As the recipe is, I found the seasonings were a little bit overpowering, and it needed more salt & pepper. But, it's a great base - next time I know what to add, and what to hold back on.

Banana Sour Cream Bread

Excellent! I only have the standard Pyrex loaf dishes (which are slightly larger than the loaf sizes called for in the recipe), so I raised the temperature to 325, baked for about 75 minutes. They came out great, and there was just enough batter left over to make 12 muffins.

Easy Pork Chop Casserole

This was very good. Based on the reviews by others - I reduced the onion soup mix, used a little less water, and a larger can of the mushroom soup. I'm glad I made the changes - otherwise it would have been way too salty. I mean, it's not a spectacular recipe that I would prepare for dinner guests, but I will definitely make it again sometime, just for me and my husband.

Fried Mozzarella Cheese Sticks

These came out great! I have a feeling that those with bad reviews, simply didn't follow the instructions. You have to use a deep fryer at the correct temp, and only 30 seconds! If you're using the stove, nit's harder to regulate the temp - your oil has to be HOT, and fry only 30 seconds. I will definitely be making this again. Thanks!

California Kabobs

I used this marinade last night, and it turned out fantastic. I used red onion, yellow & green bell peppers, and added cherry tomatoes (for my husband). The only change to the marinade was that I omitted the sugar (didn't seem necessary). We will definitely be making this again soon.

Mediterranean Puff Pastry Chicken

We had this last night, and it was great. I only marinated for about 1/2 hour, and I cut up the chicken into small pieces. I used full pastry sheets, folding the corners in onto each other, and baked with the folded side on the bottom - no sealing required. I used two medium chicken breast halves, and had leftover filling, and these things still came out huge. I could have fed two extra people. I'll definitely be making this again. Thanks!

Fabulous French Loaves

These loaves came out great! I used olive oil in place of vegetable oil, and all-purpose flour instead of bread flour. I used my KitchenAid mixer with dough hook to mix and knead the ingredients - maybe added an extra 1/2 cup of flour. I did add a little extra salt (after reading some reviews), and didn't need to use the egg white on top. I baked for about 28 minutes, and covered with foil while they cooled, to soften the crust (I prefer a more chewy crust). I'll definitely be making these again.

Jalapeno Cheese Bread

I added extra cheese and jalapenos, and used warm water as suggested by other reviewers. I've tried this twice now, and both times it came out a little more brown on the outside than I like. The bread tasted good, but was a little too sweet for my taste.

Red Potato Bites

These were great! I used baby red potatoes (larger ones would have required longer boiling time), and added some cream cheese and parmesan cheese. I used bacon bits, which really cut down on preparation time. Thanks!

After-Christmas Turkey Potpie

I tried this recipe a couple days ago, and it tasted great! I did make a few modifications, but nothing really significant. I used frozen deep dish pie crusts, which must be rather small compared to a regular pie dish, because the ingredients here filled two of them. I also used diced russet potatoes in place of the green beans (at husband's request), and cream of mushroom soup, since I didn't have golden mushroom soup on hand. I will definitely make this again. Thank you!
