About this Cook
It has been brought to my attention that my "info" is a little sparse..so I am adding a little info for the readers out there!!
My favorite things to cook
Food.. All kinds of food... Leaning towards the realm of healthy stuff..
My favorite family cooking traditions
Making something edible.. Seriously now...In the summer my Grandmother (Grammie) always put a little fresh mint into the peas before she cooked them, I do that too.
My cooking triumphs
Successfully making something edible...which sometimes is a challenge as I do a lot of "winging it" type cooking too, taking recipes and adapting them to "healthyish" and to my family's tastes..and just being creative sometimes..which leads to the cooking tragedies section...
My cooking tragedies
Started at an early age...so there are number, but lets not dwell on those...one does come to mind though, made a spicy chicken breast and my Hasbeen (hubby) asked me if I was trying to poision him...I looked him straight in the eye and said "If I was trying to poision you, I would have done it a long time ago". He hasn't complained much since...

Fresh Peach Dessert
Everyone loved this! I microwaved the mini marshmallows and milk at 50% power for 45 seconds twice, stirring after each time increment which makes quick work of the melting marshmallow step. For the crumb base I subbed 1/2 ginger snap cookies and processed them in the food processor with the graham cracker crumbs and the butter. I reserved 1/2 cup to sprinkle on top just because the crumbs were so tasty! Used a chilled bowl and beaters which helped with the whipped cream on such a hot and toasty day! I will definitely make this again! Thanks for sharing your recipe!

Roast Pork with Maple and Mustard Glaze
Turned out great! Made in the slow cooker, used pork tenderloin, halved the sauce and added some cornstarch and some red pepper flakes too!

Scarlett's Chicken Cacciatore
This was great! Added extra diced green/red peppers, zucchini, grated carrots (slide those veggies in where you can), 1/4 cup shakey parmesan cheese, used regular crushed tomatoes so added extra dried basil and oregano and a little brown sugar. Threw it all in the slow cooker, served over WW egg noodles with a sprinkle of real parmesan on top. Thanks for sharing your recipe!
