Shortbread Supreme

Reviewed: Dec. 19, 2007
These are the measurements I used in Scotland, where I lived for fifteen years. Simple recipes are the best and this remains the most authentic recipe on the site. Just remember TWO flour, ONE butter, HALF sugar. Easy. DELICIOUS OPTION: This recipe is very robust and can stand up to a little messing about. Feel free to throw in a small handful of raisins or chocolate chips when adding the flour.

Both my darling wife and eldest son both said "I won't like this or that" while we were making this together and yet they both LOVED IT when it was done. Excellent recipe!! Many thanks!!

Jenny's Cuban-Style Slow-Cooker Chicken Fricassee

Reviewed: Aug. 14, 2010
Thank you Jenny! My whole family loved this once I pulled the wine from the recipe. My wife loved it, our fussy 9 year old had three servings and even the 18 month old loved it too. I put in too much chopped garlic (on purpose) to make it taste stronger as I removed the wine. Excellent recipe.

Leftover Chicken Croquettes

Reviewed: Sep. 21, 2010
GOOD STARTING POINT for your own ideas. Use the chicken, breadcrumbs and eggs as your base. Add any veggies, spices or herbs you like. I have a 2yr old and a 9yr old so for them I drop the onions and parsley and just add fresh chopped cilantro, salt and pepper. MEAT GRINDER IDEA: If you have a meat grinder put some of the leftover chicken through then add the bread crumbs, eggs and herbs. Leave some chicken to put through at the end to clear out the grinder pipe. Don't want it dry? Always add another egg if you think it's too dry.

English Flapjack

Reviewed: Oct. 10, 2010
I'm English. I'm a bloke. I live in the US. I do the cooking in our house. :-) This recipe is authentic . . . . . PROBLEMS: It crumbles? Too many oats? . . . . . . SOLUTIONS: ONE: In step 2 you must combine on very low heat and leave gently heating for at least 5 minutes, stirring occasionally. Waiting for just the butter to melt is NOT long enough. The reason is that the brown sugar needs to liquefy. TWO: As good as they smell you must allow them to cool UNTIL COLD ..... Follow both these directions with the above recipe and you'll be fine. ..... My personal changes: When I add chopped dates I remove the same size amount from the oats. For example if I add 1/4 cup of dates, I remove 1/4 cup of oats. I also make them in a muffin tin for individual lunch box portions (as my photo shows). Enjoy.

Marinated Baked Pork Chops

Reviewed: Mar. 6, 2011
Excellent recipe. Truly JUICY Pork chops in an hour. Kids: 9yr and 2 yr all wanted MORE! ONE TIP: Marinade for a few hours in fridge for a deeper taste. TWO TIP: Personally I make twice as much sauce as needed to keep the chops even juicier. THREE TIP: Save on washing up; dump everything in a ziploc and shake, shake, shake.

Raisin Puffs

Reviewed: Nov. 12, 2011
READ ME >>> I'M HELPFUL. This recipe is fantastic, however, the "walnut sized" suggestion is not helpful as none of us know what that means specifically. To get this right first time make the dough balls just under 1/8th of a cup in size and keep them AT LEAST 2 inches apart in the oven, as these cookies like to spread out. Funny thing is, even if they spread out and blend into one another, they are still delicious once they've cooled.

Spinach Pastry Diamonds

Reviewed: Jan. 21, 2012
Not big on mushrooms so simply used Campbell's® Condensed Cream of Chicken soup Although the recipe neglects to mention this, do not dilute with water. Follow the recipe (DO NOT forget the nutmeg, it DOES make a difference) and it comes out perfect and tastes fabulous. Great for entertaining. I added a photo. Enjoy.
