Beer Batter Fish Made Great

Very good. I took the other reviewers suggestions to heart and substituted Old Bay for the salt and halved the amount and it came out perfect. The directions say to salt and pepper the fish and then add salt and pepper to the batter, that's way to much seasoning and overwhelms the fish flavor. Just season the batter and even then cut back some.

Fantastic Focaccia Bread

It's a little stingy with the honey, I used at least a Tablespoon to get the yeast going good. The family loved it. 5 thumbs up. I'm going to have to double the recipe if I want left overs. I also made it in five inch rounds, just perfect for a sandwich bun.

Blue Cheese Coleslaw

I followed the recipe exactly the first time and it was excellent but I changed it a bit to work better out of our kitchen the next time. I used crushed pineapple instead of the grapes (much easier) and used a chunky blue cheese salad dressing instead of the mayo and crumbled cheese. Tasted great on my pulled pork sandwiches.

Parmesan Chicken

I love this recipe, so quick and easy. I'll pan fry up a few breasts then put them in a casserole dish over a skim of marinara sauce to bake the next day for company. I serve them on a bed of spaghetti with more marinara and more Parmesan on the side

Seafood Enchiladas

A very good recipe that needs a little extra to get 5 stars. A little bland for Mexican food so I spice it up by adding minced garlic, cumin, diced green peppers and cayenne to the filling. Saute these with the onions and add some of the sauce to the filling when adding the seafood.

Chocolate Frosting III

A quick and easy recipe I used in an emegency. My 17 yr old daughters brownies cracked when she rolled them out of the dish. We pushed them together but needed a frosting quick to cover the damage. I used the advice of other reviewers and halved the milk and still had to add more sugar to thicken it. It came out very good but next time I'll cut back on the butter too.

Crusty Potato Bread

I used buttermilk instead of water the first time which overpowered the potato taste. Made it again with water and used a full cup of potato flakes and cut back on the flour to make perfect potato rolls using the mixer instead of a bread machine. We're from Idaho and my wife is Irish so we take our potato products seriously, she won't have dehydrated potato flakes in the house so I had to go get some from Nana. After tasting these she picked up a box of flakes for me.

Chinese Barbequed Spareribs

Over all a very good recipe. I followed the sauce recipe exactly but cut the ribs and steamed them in a steamer pot for 20 minutes to de-fat them as I usually do, then baked them in the sauce for 1.5 hours. The family loved it but I felt it was a little off mark. Next time I'll substitute 1/4 cup brown sugar for the the honey, double the 5 spices and add some ground ginger.

Asian Orange Chicken

Excellent orange sauce. Since it called for orange zest, which requires grating the skin of an orange, I used fresh squeezed OJ from the orange which was a little overpowering on the first try. I increased the brown sugar a bit on the next try and it came out perfect. I've also cooked the chicken in a tempura batter served over rice and used the sauce for dipping or drizzling over the chicken a few times. Very versatile sauce. Added it to my recipe book.

Slow Cooker BBQ Pork Chops

Very good!! The only change I made was to toss in the beans and spices along with the chicken broth to simmer together rather than waiting. I served this with the "Slow Cooked Pork Barbeque" a perfect match.
