Best Big, Fat, Chewy Chocolate Chip Cookie

These are big, fat and chewy as advertised, and they are a good cookie--but not the best I've had. Very sweet for our taste. Also, I used salted butter and a tad more than the amount of salt called for, but I think maybe a whole tsp of salt would have been better. Maybe that's just me, but I like a bit of a salty taste to the dough to balance the sweetness of the chips. If I make these again, I'll reduce the sugar and increase the salt.

Ricotta Cheese Pancakes

With all-natural ingredients these are five-star. We make them with real eggs, blue agave juice (low-glycemic), and whole wheat flour and a little lemon juice. My family prefers them to any other pancakes when made this way, and they are far healthier than the ordinary carb-loaded version.

Cheeseburger Meatloaf

Great comfort food! The whole family loved it, including my increasingly picky 2-yr-old. Easy to roll with waxed paper. Delicious with some chopped mushroom and Italian seasoning added to the meat, and a mix of american, mozz and grated romano cheeses. I used turkey instead of beef and it was still moist and tender. Also looks impressive when you slice it!

Banana Oat Muffins

Delicious, even without the topping. I'm trying to eat a bit healthier, so I omitted it and used a scant 2/3 c. of brown sugar instead of 1 c. white. Also used yogurt instead of sour cream. Cooked only 20 minutes. Results were moist and yummy!

Quick and Easy Pizza Crust

So quick! The way pizza should be. I usually use frozen dough from the grocery store, but this came out with a far crisper bottom than that does, even when cooked on our pizza stone. Also it was great to be able to use whole grains (I used half whole wheat flour, half kamut flour). Worked out fabulous. I added about 1/2 t of italian seasoning and about 1/4 c romano to it. For my taste, the dough was a tad sweet, so I will add just a bit more salt or cheese next time.

Super Moist Pumpkin Bread

Best pumpkin bread I've had! I made muffins and a loaf out of this full recipe, using 3 1/4 c flour and cooking muffins 22 minutes as suggested by a previous reviewer. Made a couple of adjustments to cut down on the refined/processed ingredients as well: for flour: 1 1/4 c whole grain spelt flour 2 c white whole wheat flour for sugars: 1 c unrefined molasses sugar 1/2 c organic blue agave nectar for oil: I melted 3T butter in glass measuring cup, stirred in a 1/2 c size cup of applesauce, and made up the difference with vegetable oil I also added a bit of allspice. The result was a deliciously cake-like, perfectly sweet and spicy bread that I'm having trouble not devouring. My 14-mo-old loves it, too, and I don't have to feel guilty for giving her some.
