My family and I are trying to eat healthier meals, with more low-glycemic vegetables, good fats and proteins, and whole grains in the right ratios. My doctor told me that more than half of the stress we experience comes from our adrenal gland reacting to the spikes and dips in blood sugar from the sugary, starchy, and processed foods we eat. With stress being such a health risk, that's a scary thought!
My favorite things to cook
As a dessert devotee, I am on a quest for healthy baked goods my family can eat without totally stressing our bodies out. I adapt recipes, substituting whole grain wheat and spelt flours for enriched white flour, and unprocessed sugars, xylitol (all-natural veggie-based sweetener) or blue agave juice for regular sugars. It's not as good as eliminating them completely, of course, but it's a whole lot better than a Twinkie!! And frankly, it generally tastes better, too. By the way, does anybody know of a chocolate chip that is sweetened with a low-glycemic sweetener, and is NOT vegan? I think I will try to make my own if not.

Best Big, Fat, Chewy Chocolate Chip Cookie
These are big, fat and chewy as advertised, and they are a good cookie--but not the best I've had. Very sweet for our taste. Also, I used salted butter and a tad more than the amount of salt called for, but I think maybe a whole tsp of salt would have been better. Maybe that's just me, but I like a bit of a salty taste to the dough to balance the sweetness of the chips. If I make these again, I'll reduce the sugar and increase the salt.

Ricotta Cheese Pancakes
With all-natural ingredients these are five-star. We make them with real eggs, blue agave juice (low-glycemic), and whole wheat flour and a little lemon juice. My family prefers them to any other pancakes when made this way, and they are far healthier than the ordinary carb-loaded version.

Cheeseburger Meatloaf
Great comfort food! The whole family loved it, including my increasingly picky 2-yr-old. Easy to roll with waxed paper. Delicious with some chopped mushroom and Italian seasoning added to the meat, and a mix of american, mozz and grated romano cheeses. I used turkey instead of beef and it was still moist and tender. Also looks impressive when you slice it!
