Asparagus Cashew Rice Pilaf

A big thank you to Sabrinatee for submitting this recipe. I did roast the asparagus first however a NOTE TO SELF will only do so next time AFTER the rice is cooking. Used chicken stock and not as much butter. Would be fine to use orzo but angel hair pasta is what I had and what I used. PERFECT! Saying that this tastes like rice a roni is insulting. I had it with the Fish with Maille (R) Dijon Originale from this site. It was the perfect side dish. 5 Star all the way! Will play with it with broccoli and almonds if I am in a pinch but tonight the asparagus and cashews were spot on! Made just enough for DH & I with a small amount of left overs for tomorrow. Will need to double if ...or shall I say WHEN I make this for company! No way it will serve 8!! as it stands. 4 yes 8 n0!

Fish with Maille® Dijon Originale Mustard

I hate it when people review a recipe without following it to the letter first, and yet this is what I am doing. I admit it, I cheated...so here it goes...based on reviews I tweaked it. I don't feel too bad about his as it was submitted by a company and not a "real person" I Seasoned the fish with a generic seasoning for pork or fish. Was going to use Lemon pepper but found out too late I was out! Perhaps this was a blessing in disguise? Mixed up some mayo with the country style Dijon Mustard and baked it without searing it first. Yes, I put dried parsley on the top. My only side was an Asparagus Cashew Rice Pilaf also from this site. The results were a 5* restaurant quality meal. No need for any tarter sauce or lemon juice or anything else. It stands on its own. I have made several fish dishes from this site but THIS ONE...OMG!! Easy to make, easy to bake, did not require any special ingredients that are not normally in the pantry or fridge. I can't stop raving about how good this was. Needless to say I will make this again. It just pushed my favorite standby fish recipe which I have been using for the past couple of years to the wayside!!

Tasty Spicy Rice Pilaf

Tried this last night. I modified to fit what I had on hand meaning I don't use instant rice. I only used 1/2 roasted red pepper, added 1 small zucchini diced. Did everything else according to instructions but threw it all in the rice cooker with the chicken stock to cook on its own. Was perfect with grilled salmon. Would go very well with shish kabobs or anything else really.

Creamed Spinach II

Good! Fast and easy. Used 2 bags of frozen spinach. Added 2 oz each of cream cheese and parmesan cheese to soup. Will make this again. My Mom does not like spinach but she liked this!!

Grilled Salmon I

Absolutely great! Better than anything you pay big $$$ for in a restaurant. I had this with creamed spinach and a vegi-rice pilaf. Three brand new recipes all from this site all done for one dinner! It was special!

Easy Cinnamon Rolls

This was my 1st time making cinnamon rolls. I Only did so because the bread recipe I was making from this site said it made 3 loafs (Grandma VanDoren's) and it is just DH & myself. WOW!!! In the beginning I THOUGHT I had everything but way too late realized I did not have cream...so...I mixed some liquid French Vanilla coffee creamer with some 1/2 & 1/2 (and still added the vanilla extract) up at the last minute. Hey, what can I say? They were freaking awesome! On a personal note just for myself, I won't worry about nuts next time... even though I loved this with them... it is still an extra expense that could be left out without compromising the flavor. AND even though I thought pouring the creamy mixture over them before baking sounded strange it was spot on!! I will try making another cinnamon roll recipe on this site but have a feeling nothing could be as good as this one. I feel as if I have to try baking another one just so I know for certain that this is THE ONE to use. I will of course post an update later. That being said, I won't use baking bread as an excuse to try my hand at cinnamon rolls ever again. SO 4.75 Big gold stars from me!

Thai Style Shrimp

5 star's hands down! I used 2 Thai red chili peppers instead of a jalapeno and Thai basil, both of which I picked out of my own little garden! Per other reviews added some sesame oil to the small food processor to make the paste. I also used 3/4 of a large can of diced tomatoes and drained them as I did not have fresh on hand. I added the basil a few minutes (maybe 5) BEFORE adding the shrimp (which was saved till the very last)and pronounced it done once the shrimp turned pink. This was simple to make but tasted as if it took an awful lot more effort! The only change I will make next time is to use a 3rd pepper for making it as is. My plans however are to double the recipe next time for company and leftovers for the next day.

Indian Chicken Curry II

Made this last night. Used 6 thighs. Skinned and de-boned them my self. Used about 6 teaspoons of curry! The house stank....but oh my! So worth it. Will do it again. My add vegi's to it next time. I'm thinking a small amount of potato or maybe carrots mushrooms and peas.

Banana Cake VI

I made this for Thanksgiving. Followed the recipe without making any changes at all. It made 3 8 inch layers. It was out of this world! Made it a 2nd time for a work Christmas party and again it was off the chain. I had to bake it in advance and let it freeze in the pans and then took them out and wrapped them tight with plastic wrap and kept the layers frozen until I was ready to ice them. Perfect cake!

Chef John's Fisherman's Pie

OK, tried this tonight and WOW! So much healthier than the fish recipe I have been using. Taste is amazing. I used a tad more lemon juice and 5 small potatoes which was all I had. I'll be sure to make enough potatoes next time. Again, there will soooo be a next time!

Mahi Mahi with Coconut Rice and Mango Salsa

Made this tonight. I did double the marinade part as I had double the fish called for. Other than that, and using a whole can of coconut milk, I followed the recipe to the letter! I did not use my rice cooker but will do so next time. It was outstanding!5* all the way! The heat from the hot pepper was perfect with sweet of the mango and coconut rice.

Bloody Mary Short Ribs

4.5 stars. Very good. Followed the recipe except I made it in the slow cooker. Will make again but will substitute the short ribs for a less faty beef. A roast would work great.
