Pesto Pasta with Chicken
This was pretty good but I was slightly underwhelmed...hoping for more flavor, I think. I used store-bought pesto and I'm thinking if I had used fresh or possibly a different sauce it would have been better. I doubled the garlic and used roughly 3/4 cup of pesto. I couldn't find sun-dried tomatoes in oil so I used dry - I'll probably take other reviewers' advice in the future and saturate them before adding to dish. I will definitely make again and play with this until it's a 5-star recipe for me. :)

Black Bean and Corn Quesadillas
I just realized I hadn't reviewed this...but this recipe has been in my normal rotation since I first tried it years ago. I make this at least once a month. I've tried different variations and they were excellent (switch up the cheeses or veggies depending on what I have on hand - but I always have the black beans and at least some corn). The only change I make on a regular basis is to use the Foreman instead of in a skillet because it's so much easier. Thank you for a great recipe!

Pumpkin Pie Spice II
I always make seasonal "spices" like this (that require a combination of spices) myself. That way I only have what I need on hand and I'm not buying something I technically already have. Thanks for the recipe.
