Bolognese Stuffed Bell Peppers

Big hit. I added shredded zuchinni and replaced celery with onion. I also used ground turkey instead of ground beef. Great way to serve vegtables!

Three Berry Pie

Delicious! I used 5 cups of the 3 berry mix from Costco. I also upped the cornstarch to 1/4 cup and sugar to 2/3 cup. Nice consistency - everyone loved it!

Baked Beer Can Chicken

My family loved it. Very tender chicken with a good taste. I cut the salt in half, and baked it at 375, as I had a 6 pound chicken read the other comments about the length of time it takes to bake. We live in a high altitude and it took a little over 2 hours

Mini Sweet Potato Pies

Great to bring to a party! Be sure to have the recipe handy - they will be asking for it! Very easy - my only problem was I wasn't sure on the quantity of potato - 2 cups? I used 1 1/2 medium sweet potatoes and it made a double batch. I also used soy milk instead of evaporated milk and it worked fine. LOVE the recipe!!!

Herbed Potato Soup

Very easy and the whole family loved it! I just threw the onions in with the potatoes and elimanated the butter. I also used soy milk instead of regular milk. This is a great winter soup!

Ian's Potato-Vegetable Soup

Good and easy recipe. I took suggestions and only used 3/4 tsp of salt. I cooked the potatoes then blended them before adding fresh (not frozen) vegtables. Colored peppers are a must! Because the potatoes were blended, there was no need to add cream of celery soup. I also added rosemary and doubled the recipe. The whole family loved it!

All Day Macaroni and Cheese

Big hit at a pot luck! I used velveta cheese with the cheddar cheese and half non fat milk with the evaporated milk. Didn't cook the noodles and they were fine. Everybody loved this recipe! Mine finished cooking in 2 hours.

Different Chicken Cordon Bleu

A deliciuos and easy dinner. Great for a dinner party or to take to a house. I used 1/2 sour cream and 1/2 plain, non fat yogurt and it was great. I needed to cook it over an hour, and added the stuffing the last 20 minutes. This is now on my frequent meals list! Thank you!

My picky family, who never likes the same casserole, all loved it! I used ground turkey, and cooked Egg Beaters with Pam to keep the calories down. It wasn't my favorite - but to keep the husband and kids happy - it was worth it!! This will be served often! Fast and easy!!!

Oatmeal and Applesauce Pancakes

Never made pancakes this fluffy before!! I used WW flour, added 1/4 cup oat bran and 1/4 cup wheat germ. Used apple flavor yogurt instead of sour cream and egg substitute. Also doubled the recipe because they were eaten so fast!

Quick and easy - the family loved it! I added diced onions and peppers to the oil and garlic. I also used spicy turkey sausage and whole wheat pasta. I'll be making it again soon!

Peach Cobbler II

After years of looking for the perfect cobbler - it's so nice to have found it! I was a little sceptical of pouring boiling water over the top - but it was perfect! I used 8 peached and 9 x 13 dish - but apart from that - I can't imagine doing anything diffent. A fabulous recipe!

A Sunday morning must!! I add a 1/4 cup each of chia seeds and oat bran, use almond milk and decrease baking powder to 3 tsp. A guilt-free waffle!
