Baked Beer Can Chicken

My family loved it. Very tender chicken with a good taste. I cut the salt in half, and baked it at 375, as I had a 6 pound chicken read the other comments about the length of time it takes to bake. We live in a high altitude and it took a little over 2 hours

Oatmeal and Applesauce Pancakes

Never made pancakes this fluffy before!! I used WW flour, added 1/4 cup oat bran and 1/4 cup wheat germ. Used apple flavor yogurt instead of sour cream and egg substitute. Also doubled the recipe because they were eaten so fast!

Zucchini Cheese Garlic Appetizer

A very easy recipe and everyone loved it! I'll make it again and again. I did use shredded parmesan cheese instead of grated, low fat bisquick and egg beaters to help with the caloric intake.

Mini Sweet Potato Pies

Great to bring to a party! Be sure to have the recipe handy - they will be asking for it! Very easy - my only problem was I wasn't sure on the quantity of potato - 2 cups? I used 1 1/2 medium sweet potatoes and it made a double batch. I also used soy milk instead of evaporated milk and it worked fine. LOVE the recipe!!!

Three Berry Pie

Delicious! I used 5 cups of the 3 berry mix from Costco. I also upped the cornstarch to 1/4 cup and sugar to 2/3 cup. Nice consistency - everyone loved it!

Ian's Potato-Vegetable Soup

Good and easy recipe. I took suggestions and only used 3/4 tsp of salt. I cooked the potatoes then blended them before adding fresh (not frozen) vegtables. Colored peppers are a must! Because the potatoes were blended, there was no need to add cream of celery soup. I also added rosemary and doubled the recipe. The whole family loved it!

Bolognese Stuffed Bell Peppers

Peach Cobbler II

After years of looking for the perfect cobbler - it's so nice to have found it! I was a little sceptical of pouring boiling water over the top - but it was perfect! I used 8 peached and 9 x 13 dish - but apart from that - I can't imagine doing anything diffent. A fabulous recipe!
