Beaker's Vegetable Barley Soup

Reviewed: Mar. 16, 2009
This soup was excellent. I thought it was a bit thick but we didn't mind that. I made this recipe exactly as written and it was really good. I will however leave out the garbanzo beans next time becuase we didn't like the texture of them in the soup. Will make this again.

Roasted Garlic

Reviewed: Mar. 5, 2009
Wow! This was amazing. This is the first time I've ever made or tasted roasted garlic and I'm very happy that I made 4 heads of garlic. I did take the advice of other reviewers and baked it a lot longer. I used canola oil instead of olive oil and baked them for 1 hour. I will be making these a lot!

Pistachio Cake II

Reviewed: Feb. 24, 2009
Awsome recipe! This cake is so good. The whole thing went in a flash. Today I'm going to make a chocolate version using rootbeer or cherry soda. The only thing I changed was instead of the 2 envelopes of whipped topping mix I used whipped cream. I will be making this often. Thanks for posting the recipe!

Scalloped Potatoes and Onions

Reviewed: Feb. 24, 2009
This recipe is fantastic! I did change it just a bit because I had some fresh whole leaf spinach and some celery that I wanted to use up. So I added diced celery and the spinach to the onion and potato layers. I also added grated marble cheese on the top.It was soooo good. I'm sure this recipe is wonderful just as written and will try that next time.

Cranberry Pistachio Biscotti

Reviewed: Dec. 12, 2008
FANTASTIC...this was very easy and so tasty. I followed some other reviews and added 1/2 tsp. orange extract. I used 1 cup of slivered almonds that I crushed by hand and 1 cup of cranberries which I chopped to make the biscotti easier to cut. Worked like a charm. I got 32 clean slices. The dough was sticky but I didn't touch it with my hands, instead I used a silicon spatula to shape it which worked really well. I will be making this again for sure.

This was FANTASTIC! I did change it just a bit. I added 3 plums and used apple juice instead of water. Such a good, quick and easy treat. I will make this often.

Mocha Ice Cream

Reviewed: Aug. 4, 2008
This is fantastic Ice Cream. The first time I cut the recipe in half but since then I make the full amount. Not only is it fantastic as an ice cream but it also works great as an ice cap. I fill my blender half way with ice, add in a bunch of the recipe mix, some extra coffee granuales to taste and some milk. Blend this all together and you come really close to a Tim Hortons Ice Cap. Love this recipe and will make this again and again. Thanks for posting this recipe Mr. McCarty.

Cream Of Garlic Soup

Reviewed: Jan. 15, 2008
I loved this soup and will definitely make it again. I did however change it slightly. I added about 3 cupes of cubed potatoes and 2 cups of wine. I did not puree my soup and used a potatoe masher instead. It still had a bit of texture that way. I cooked it an extra 15 minutes because after I mashed with the potatoe masher I added a bunch of chopped Kale and cooked it for the additional 15 minutes. It was ssoooo good. As for the smell...WOW...is all I can say. My son is still mad at me. Thanks Holly for a great recipe.

White Chocolate Cheesecake with White Chocolate Brandy Sauce

Reviewed: Dec. 26, 2007
This is an amazing recipe. There is one thing that I recommend and that is that you use a good quality white chocolate. The first time I made this I used chocolate from the bulk bin and it was an awful tasting cheesecake. I made it for Christmas this year with good quality white chocolate and took it to a family gathering. Everybody loved it and wanted the recipe. It really was amazingly good. I had added an oreo cookie crust, about 20 oreo cookies crushed and pressed into the pan. They do not need sugar or butter and hold together nicely. I also changed the sauce and added about 3/4 cup Butter Ripple cream liquor instead of the brandy. It was phenomenal. When I served it, both the sauce and the cheesecake had been sitting in the frige and the sauce was nicely thickend. The recipe for the sauce made quite a large amount of sauce and I may try cutting that in half next time I make it. I sprinkled raspberries and blackberries on the cake to serve and it was a huge hit. I will be making this again and again.

Lemon Garlic Hummus

Reviewed: Dec. 19, 2007
Wow! This recipe rocks. It is easy to make and tasts sooo good. I used my blender to make this and made a couple of small changes. I added an extra tablespoon of lemon juice, 1/3 cup of sesame seeds, did not measure my garlic and just used 3 large cloves of garlic instead. It was fantastic. This is definitely a keeper. Thanks Kris!

Jiffy Ground Pork Skillet

Reviewed: Nov. 14, 2007
This dish was easy, very tasty and the kids loved it. I did make a couple of minor changes. I added 4 cloves of garlic, 1 large onion, salt, pepper and some fresh parsley. I also used home canned tomatoes instead of the can of stewed tomatoes. I will make this recipe again for sure.
