Fettuccini Alfredo II

I'm not sure if others just like the overly sweet flavor that this has, but I wasn't impressed. It is creamy and it covers the pasta well (I cut back on the amount of pasta like others mentioned), but flavor wasn't what I was expecting.

Two Ingredient Pumpkin Cake

Very tasty recipe. I did add a couple of eggs just to be on the safe side, but next time I'll try it without any additions. Also - another poster mentioned adding chocolate chips and making cookies - I'm trying that tonight.

Oatmeal Cocoa Macaroons

Like others, I used butter instead of shortening and added more coconut, and they were excellent. At least five people at work asked for the recipe. Incredibly simple and quick to make.

Thin Mint Crackers

I cheated and used the Andes Mint pieces from the baking aisle at the grocery store. Perfect for when you just want a quick treat - pour some Andes pieces in a bowl, melt them in the microwave, dip a few crackers and pop them in the fridge for five minutes. Yum!

Irish Potato Candy

I made these last night and took them to work for a potluck. Everyone that tried them loved them. I cut back on the confectioners sugar by about a 1/2 cup, though. I also mixed in some cocoa power and confectioners sugar with the cinnamon. Chilling the mixture before rolling and then chilling again prior to coating them seemed to help a lot. I tapped each candy on the edge of a bowl to get the excess cinnamon mixture off so that it wasn't too overpowering.

Cream Cheese Fruit Dip

I whipped this up last night and brought it into work today with sliced green apples and everyone LOVES it! I cut back a little on the brown sugar but it's extremely tasty.
