Gourmet Chicken Salad

I did not have the cucumber salad dressing, grapes or the almonds on hand. So I omitted the almonds, and substituted with raisins and miracle whip instead. I also added a few shakes of curry powder. It still came out great, and makes a great lunch to take to work.

Zucchini Patties

Quite enjoyable, and very easy to make! My only suggestions is to drain the squash and use panko breadcrumbs instead of the flour. It's really fine with the flour, but the panko just gives it a different texture that I tend to like. Finally, don't be afraid to adjust the seasonings to your liking. It's a very flexible recipe.

Strawberry Avocado Salad

This rocks plain and simple! My only suggestion is, like others said, reduce by half, or eliminate, the sugar. Also, serve this immediately. It's much better served that way.

Fish Tacos

This is pretty good, but it's better with a few minor changes. First, season the fish with a little salt, pepper, onion powder, cumin, and garlic powder in addition to the chili powder. This brings out the fish flavor nicely. Remember it's a fish taco. You should taste the fish. Next, the 1/4 cup of salsa that is mixed with the cabbage to make the slaw is enough. Adding extra salsa later will completely overpower the fish. Also, not too much cheese. You only need a little bit, if any at all, too much will again overpower the fish flavor. Only other thing I can add is to make sure the tortillas are hot. The total flavors just seemed to pop out better when they're really warm. Lastly Don't use any cheap, flavorless, nasty fish like tilapia. For the love of life, use good fish. It makes a world of difference.

Homemade Black Bean Veggie Burgers

This was pretty good. My suggestion to combat the patties breaking up is to not make them too thin or wide. A really thin or wide patty will flex and tear, and will be hard to handle. These are not bad though, and quite economical.

Tofu Peanut Stir-Fry

This makes for a pretty darn good meal. I liked it. Another option if you want to cut the fat content down some, is to substitute the dry fry method when prepping the tofu (google it if you don't know how). That will eliminate the need for deep frying methods. This will cut down the oil requirements, eliminate the eggs and cornstarch, and will help dry out the tofu enough where it won't fall apart. This will also result in the sauce being absorbed a little better. Either way though, this is a pretty good recipe.

Pan Fried Halibut Steak with Light Green Sauce

I made this as written, and i found it to be a great dish but other reviewers are right about the excessive lemon content. I think 1 Tbsp of lemon juice should be the maximum amount added.

Sesame Noodles

This is a very flexible side dish. I earned points with my special lady with this one. It's easy, and it's a winner. Update: I added the fresh ginger as suggested, and it absolutely takes this to the next level. If you haven't tried it, what are you waiting for? New Update: This turns out fabulous by substituting fine egg noodles in place of the linguine, and reduces cooking time.

Ginger Glazed Mahi Mahi

I would not change anything with this recipe with the exception of the cooking method. I find it a little difficult to get the fish to cook evenly on the stove-top. However baking the fish at 400 degrees for 20 minutes as another reviewer suggested cooks the fish evenly and makes for a succulent fish dinner. I then use a small saucepan to cook down the glaze and pour it on top of the baked fish fillets. I made this along with the recipe for "sesame noodles" from this site for a romantic dinner with my special lady and she was pretty impressed. This recipe is definitely worth the effort.

Balsamic Vinaigrette

A great salad dressing that tastes good and doesn't require a billion different ingredients. It is definitely a good go to recipe, that beats the bottled stuff, and is more economical. A suggestion, substitute the balsamic vinegar with seasoned rice vinegar to make a basic Asian styled dressing.

All i can say is to forget the taco seasoning! Replace it with a sprinkle of french fry seasoning and cinnamon instead. You won't be sorry.

This is a great recipe plain and simple. Just make sure you are using fresh lemon juice, and let it rest in the fridge for several hours before serving. It is a fantastic dip.

Savory Garlic Marinated Steaks

This is not a bad recipe at all, but I think it is just too strong of a marinade for a good piece of steak. It just alters the flavor of the meat way too much instead of complimenting it. My opinion is simply that a good steak just doesn't need it.
