Mom's Zucchini Bread

My loaf pan is slightly larger than what this recipe calls for... not enough left over to do muffins with but th recipe ws GREAT... I used half applesauce half oil as recommended. A crumb topping would be nice also but it stands on its own!!! Loaf went in an hour at work.

Portobello Mushroom Burgers

Used my counter top inside grill. Also subbed garlic powder for fresh ... grilled a few slices of vidallia onion to top. Awesome I had a burger for lunch so this was perfect for dinner.

Alfredo Sauce

Very good... as easy as opening up a jar of sauce but so much fresher. I used liight cream and a mix of parmigiano reggiano and shredded peccarino ramano. I went overboard on garlic ... but like others I sauteed the garlic and little onion in the butter with a little olive oil. This sauce was for tortellini with broccoli very good!

Buffalo Chicken Dip

If I could give this more stars I would. Have made this twice in under a week for 2 functions and have not had any leftover. I basically kept the recipe the same but used low fat cream cheese and light blue cheese dressing and a rotisserie chicken almost the entire chicken... i just used my hands to shred it. Will use this many times over.

Original Nestle® Toll House® Chocolate Chip Pan Cookie

I went against my own judgement and cut the butter that may have been my mistake. These are very rich very good bars (blondies) and you can taste the butter even with it reduced a little. I put it in a 9x12 pan and they came out too undercooked at 25 minutes I added another 10 minutes and the edges were too over done... overall a nice bar will make again following the recipe to a t

Clark Gable Pancakes

These were good pancakes. I must agree with those who recommend cutting the baking powder down a bit, I didn't because I don't like fooling with a recipe until I give it a shot first. Make sure your griddle is hot enough. Mine wasn't at first and they did not fluff up nicely. Got fluffier as the griddle got hotter.

Hash Brown Casserole II

I am giving this 5 stars and not 4 because the pan was cleaned out quickly at a church pot luck, and I doubled the recipe. To me it was a little bland and I am not sure what it was missing, I did omit the little bit of salt because the canned soups are so high in sodium... I will make it again and try adding more spice and/or onions, peppers, something...

Sauteed Garlic Asparagus

Use Olive Oil instead of butter for a healthier version... I find garlic burns too fast so I used garlic powder and kosher salt. To make it go better with my italian dinner grated parm at the end was the perfect answer.

Split Pea Soup

I have used this recipe long ago and cannot remember if I rated. This is a great recipe it is actually exactly the way mom made her soup (and the spoon could stand up in her soup!). My teenage son had 2 friends over and they kind of turned their noses up to what I was making but sat down and tried it and now asks my son when I am making it again.

Artichoke & Spinach Dip Restaurant Style

Made this again and again I topped with a tiny bit of bread crumb... it was almost eaten completely! Used jarred roasted garlic alfredo sauce and marinated artichoke hearts... YUMMM was fantastic again!

Pumpkin Bread II

I made this for my mom who loves pumpkin bread... I do not love pumpkin bread but with this recipe I do now. Brought mom a loaf and left one here mine is almost gone. I reduced oil in half and substituted half with applesauce also did 1/3 dark brown sugar and the rest white sugar I did reduce the white sugar by 1/4 cup. Thanks for the recipe will make this often I am sure.

Cream of Fresh Asparagus Soup II

Very easy to make. Very tastey good texture. I used 1% milk and low fat sour cream and it was wonderful. My husband who stays away from creamed soups even enjoyed this one.

Sour Cream Bundt Cake

This is my top secret recipe STILL almost a year later and it always comes out perfectly! I use this trick with chocolate, white and yellow cake mixes... My 14 year old daughter loves making it with me and I am sure it will turn into her top secret recipe... You do have to cook it a tad longer just keep an eye on it and check it frequently at the end. I do NOT use an entire cup of sour cream it is more like 3-4 TBLS people at my office request me to make this cake for office parties...
