Black Bean Hummus

Reviewed: Aug. 5, 2013
I accidentally used a 19 ounce can instead of 15. I also didn't use Tahini and used a teaspoon of sesame oil instead. That is how I do it with hummus. However I added the 2 tablespoons lemon juice and liquid and it was sooo runny! I have to call this a black bean dip and not hummus. Even using a bigger can made it this runny. Other than that I found it too lemony as well so had to add some extra salt and sugar to even it out. Perhaps the tahini would have thickened it but I would recommend that you don't add any liquid until it's blended and see if you need it first.

Roasted Mushroom and Sunchoke Bisque

Reviewed: Jan. 29, 2013
Well I adapted this a bit and it was great. I didn't have enough sunchokes so I put in white asparagus in addition to make up the difference. I put them in the oven with the mushrooms. This was fantastic! Tasted like a wild mushroom soup. I poured in a little whipping cream at the end in the bowl to give it a swirl like in the picture. I didn't want to add it to the soup because then there is something in it that can spoil and I plan to freeze some. Will definitely be using this technique again. I thought it would be a little bland with the addition of straight water but the roasted veggies turned it into a broth of its own almost immediately.

Thai Green Curry Chicken

This was a really good chicken dish. Not that spicy but that could be adjusted to taste.

Sesame Shrimp Stir-Fry

Reviewed: Aug. 11, 2012
This dish was restaurant quality, just amazing! I can't say how difficult it was since it was made for me, but I can say that he's tried other recipes on here and not done so well. We didn't have cornstarch so used a bit of white flour instead to thicken.

Simple Salmon and Spinach Sandwiches

Reviewed: Nov. 17, 2011
I made this and really didn't like it. I think with mayo it would be good but the salmon with thousand island made it sweet and fishy which I didn't like. However my boyfriend loved his so I guess it's a matter of taste.

Gourmet Mushroom Risotto

Reviewed: Nov. 17, 2011
I used all portobello mushrooms in this and basmati rice. Otherwise followed it exactly. It was very good but flavors weren't that complex I don't think. Maybe more wine? Not sure...

Cream of Mushroom Soup I

Reviewed: Nov. 17, 2011
I used portobello mushrooms for this. I also did it with 1% milk instead of half and half. I did it a slightly easier way in that I thickened the flour/butter/milk in a separate pot from the main one then put them together and used an immersion blender. This was pretty good, I would make it again, very easy. I upped the sherry content too :)

Baked Trout Saratoga

Reviewed: Oct. 29, 2011
really easy recipe and turned out really well. It was quite watery in the baking dish though. I also substituted cilantro instead of parsley which I thought was really good.

Halloween Popcorn Pumpkins

Reviewed: Oct. 29, 2011
There were great to look at but I personally thought the flavor was only ok. I added caramels like another reviewer said to do and I think that probably made them better. Perhaps using rice krispies and making orange rice krispie balls would be a better plan.

Absolutely Perfect Palak Paneer

Reviewed: Jun. 27, 2011
Used swiss chard instead of spinach (couldn't tell the difference). I also used about 2 pounds of it, and I could have used the full 3 if I had it. I also used paneer since I found it, and just threw it in without frying as I don't think it needs it. Next time I would substitute yogurt for the sour cream and see how it turns out.

Spicy Indian Dahl

Reviewed: Jun. 27, 2011
Made this with 2 cans of tomatoes instead of fresh. Other than that, I added A LOT of salt, plus turmeric and the other spices because as it was cooking it seemed to have no flavor. It does get better with age and it was quite good when it was finished. Only change I would say is to use less onion.

Tomato and Basil Quiche

Reviewed: Mar. 20, 2010
I made these with sundried tomatoes (8 of them). It wasn't bad but I felt it was lacking flavor a little. I like the spinach quiche recipe on here better.

Cream Cheese Clouds

Reviewed: Mar. 20, 2010
I almost shouldn't be rating them since I made a few changes. I don't have an electric beater so getting them to foam to stiffen was impossible, so I added cornstarch to get them to stiffen. Also I used milk instead of cream. Then I put them into muffin cups into the freezer. Even then they were a neat idea and weren't too bad so with the right ingredients, I could see trying again :)

Fluffy Pancakes

Reviewed: Mar. 20, 2010
These didn't turn out as easily as I thought. I used balsamic vinegar instead of white and added a teaspoon of vanilla. The taste was fine, but as some other reviewers said, the dough becomes really bubbly and foamy like bread and it's impossible to pour. So I added a little more milk and stirred until it became liquidy. This meant that they weren't as "fluffy" as they could have been but I have no idea how else you can pour them into the pan. I wouldn't make them again.

Peanut Butter Noodles

Reviewed: Mar. 6, 2010
Made half of this with one pack of udon, it was more than enough sauce. I didn't add the ginger since I didn't have any. It was a bit too salty, next time I would put less soy sauce in. It was excellent though.

Microwave Caramel Popcorn

Reviewed: Mar. 6, 2010
I usually make my popcorn in the oven and over the stove and it is a lot of effort. This worked out really well. I don't have an air popper so I put half a cup of kernels in a large glass bowl with a dish towel on top and microwaved for 4 minutes. I added pecans to my popcorn and made half of the caramel topping. I agree with others about your microwave, I did my caramel at 30 second intervals and it needed only 2 minutes. I also used butter instead of margarine and pancake syrup instead of corn syrup. I also accidentally put in baking powder, and then put in the baking soda since I knew it was supposed to get foamy. My messup didn't seem to affect the outcome. I then tossed it about in bowls and followed the re-microwave for 1:10 instructions. Unfortunately one of my bowls burned a little in the middle, so again, that was too long. It's crunchy, not chewy, which is fine with me for the amount of effort put in.

Quick and Easy Tuna Casserole

Reviewed: Feb. 25, 2010
I made some of the changes that other reviewers recommended. I added about 4 cloves of garlic, a cup of milk, some fried mushrooms and I fried the onions and because I don't like peas, I used corn. I also put it all in an ungreased casserole dish with mozzarella and breadcrumbs on top and baked at 375 for 20 minutes. It was pretty good, first time I've ever had tuna casserole but something was missing. It wasn't very flavorful, I really felt it needed maybe some celery salt or who knows. If you can get the right spices in here, it would be good. Perhaps if I did this again, I would do one can of mushroom and one can of celery soup.
