Very good pancake recipe. Fluffy and light, they melt in your mouth. Make sure to follow the instructions and mix the liquids with dry ingredients when ready to make the pancakes. Also, mix the liquids first and let them sit while you combine the dry ones and get the skillet ready.

If I could give 10 stars, I would. I added more coffee and coffee liquor for stronger flavor, but followed the recipe directions on everything else.

Cornish Finnish Michigan Pasties

We saw Cornish pasties recently on TV and, living in TX, had to make them in order to try. Never cooked or eaten rutabaga, I followed the advice and doubled the amount. Pasties weren’t dry at all and I used lean meat and no butter. Make sure to add the bullion into the mixture. I let the mixture sit in a fridge for a few minutes and veggies released some more juice. I will be making them again with leftover Thanksgiving turkey.

Apple Pecan Cornbread Dressing

I was skeptical, but the dish proved to be outstanding. Made as written and couldn’t think of anything to change. It will make an appearance again on Christmas.

Sauerkraut Rye Bread

Baked on 1.5lb loaf with medium setting and it came out ok, but a bit too crispy on the outside. I will try light next time. Didn’t taste sauerkraut at all. Great!

Gourmet Sweet Potato Classic

I had none of sweet potatoes left after Thanksgiving meal. Yams took much longer to bake, but after they were done, dish came together very quickly. I added a little bit of lemon juice and olive oil when baking, then raisins after mashing sweet potatoes. Fabulous!

Cranberry-Jalapeno Relish

I decided to make it out of fresh cranberries. Set in the pot and boiled with orange juice and the rest of the ingredients. Added lemon juice and salt gradually, not to overdo on flavors and had to add sugar as it was just too sour. It tasted much better two days after. Tastes great with any meat or with chips. I will be making it again.

Pumpkin Pie Bars

Salmon and Spinach Fettuccine

Very quick and easy dish to make. I had to improvise with the ingredients I had. Used canned pink salmon, fat free milk, a few tbsp of sour cream, canned spinach, and chopped fresh tomato. Even with all these changes, the dish was very tasty. Thanks!

Spinach Tomato Tortellini

Another great find! I used all fresh ingredients, added some sautéed with onion and garlic lean turkey meat, substituted heavy cream with light sour cream diluted with fat free milk, added a few tablespoons of white wine, and a small jar of artichoke hearts. Didn’t have tortellini on hand, so I cooked jumbo shells instead. Since the shells were very jumbo empty inside, I loaded each shell with the above mentioned mixture. Poured sauce on top…and it was heavenly!

Spinach Brownies

Oh wow! Can't wait to make these again! Used half the butter, half mozzarella and half serving cheddar cheeses, parmesan cheese on top, added more garlic, fat free milk, and increased or added other spices we like. Going to try a variation with other veggies like squash or broccoli.

Pumpkin Cookies V

Very soft and chewy cookies, which are easy to make. Everyone enjoyed them. A few people started stashing them away. For a perfect shape, dip fingers in water, shake most of the water off and then shape the top of the cookie as desired. Also, dipping the whole cookie into icing was a bit too much sugar for our taste, so I loaded a freezer zip lock bag with icing, cut off a tiny end, and squeezed away. A+

Hudson's Baked Tilapia with Dill Sauce

Great way to change up a seafood dish. I didn't have dill, so I mixed Italian herbs. Mixed the leftover mayo/sour cream mixture with spinach and ate is as a dip. A+

Banana Peanut Butter Bread

Used crunchy peanut butter and skipped walnuts since PB hd chunks of peanuts. Added 1 extra tb spoon of PB and 1 tb spoon of sour cream. Baked for 1 hr 30 min. We enjoyed the bread and will be making it again.
