Vanilla Pumpkin Pie
Great recipe, there was a bit too much filling for the 9" pie tin I had, so I used the 2nd pie crust I had and made mini-pies in a cupcake pan. They came out great. Some other changes I made were to add some other pumpkin pie spices (ginger, nutmeg and cloves), 2 tsp of vanilla and I'm lactose intolerant so I substituted the evaporated milk with vanilla soy milk.
