Ground Venison Burgers

oh. my. god. These burgers were AMAZING. I made them pretty much exactly as written except I only had 1.3 lbs of venison and still used the ingredients in the amounts specified. And I cut the mayo by 1/3 with yogurt. But the flavor combination is exquisite....I will definitely make this again and I plan to share it with my whole family who also have ground venison in their freezers!

Chocolate Wave Zucchini Bread

YUM. Gotta love using veggies to make something sweet and delicious! Being a dietitian, I can never leave a recipe here are my modifications: canola oil for shortening; decreased sugar to 3/4 cup; used 1/2c AP flour, 1/2+1/3c WW flour, and 1/3c oats; for spices used 3/4t cinnamon, 1/8t cloves and 1/8t nutmeg; mixed pecans and walnuts together and toasted them; and finally...flax paste for eggs (for EACH egg, mix 1T ground flaxseed plur 3T water in a saucepan and boil until gooey, eggy consistency...then mix into batter like you would the eggs). Just need a little extra baking powder (heaping spoon). Turned out great!!

Fabulous Fried Cabbage

mmmmmm. This is very good. I was skeptical at first b/c it smelled kind of bitter in the beginning, but after steaming for ~25 minutes it was perfect! I added a whole onion, sliced thin, to the butter in the beginning. Then I added the broth and a bit of madeira wine to boil, then added the cabbage. It only needed 25 min to cook completely.

Creamy Turnip With Paprika Soup

Delicious! I used about half turnips and half yukon gold potatoes cause that's what I had. And I used 1 cup half/half and 1/2 cup skim milk. MMMMMMM

Lentil and Green Collard Soup

This was great. I am getting a box of hearty greens every week from a farm and I was starting to run out of ideas! I used my mixed braising greens for the collards, decreased the olive oil by about half, used only about 1/4 of the salt, used a little less water, and sauteed the garlic with the onions. It still turned out great for less calories and sodium =) Thanks!!
