Easy Chicken Enchiladas

I changed it up a bit to be more healthy, with LF cream cheese, black beans and soft corn tortillas, I also added a can of enchiladas sauce because I thought it would be too dry. It was OK but nothing stand out. I used a rotisserie chicken and I felt like it was a waste but it was a quick and easy meal with most of the items on hand.

Peanut Butter Frosting

Amazing cut the powdered sugar in 1/2 and it's perfect. I used it on a double chocolate cake and garnished with peanut butter cups, it was a hit!

Chicken Taquitos

Easy recipe, a bit time consuming since I had to cook the chicken all day in the crock pot and then individually wrap each taquito but very good taste over all, I skipped the onion because I had cooked mine chicken with salsa, cumin, and garlic previously then added the green salsa verde, didn't have smoked cheese but used a Mexican shredded blend I had on hand, steamed the corn tortilla and used the flour paste as someone mentioned and didn't even need the toothpicks, no problems holding together before I placed them into the deep-fry basket. Due to the size of my deep fryer I could only do 2 at a time so it was a bit tedious, overall good flavor and nice crunch. I didn't have the peanut oil but vegetable worked just fine, be careful not to use an easy burning oil like olive they need to cook a good 5 minutes for that nice browned crunch.

Asian Lettuce Wraps

very easy made as written except for the chile pepper sauce and used powdered ginger instead of the pickled, it was very good but I think I would like it better with chicken. I needed a dipping sauce for mine but my hubby added cashews to his for some texture and it was yummy! I ended up just eating it without the lettuce, with little extra hoisin sauce delicious!

Chicken Suiza Cornbread Bake

I thought it was very good and EASY! I used a rotisserre chicken, left out the mushrooms and basically everything as is except used 2 fresh eggs as others mentioned. I forgot to pre-cook the corn bread first so I let it cook for 50 minutes and it came out great, for an extra kick serve with salsa but I left it as is in hopes that my kids would like it not to spicey. I didn't see the need for condensed soup the sour cream and chicken mixture works fine.

Classic Waffles

The only change I made was to seperate the eggs and whip the whites to a soft peak and then fold in at the end, this made them light and fluffy, perfectly delicious! We added some chocolate chips when the were in the iron and that was great as well, tey also freeze well so you reheat in a jiffy.

Cabbage Rolls II

I like mine saucy so I used 32 oz of tomato sauce and 1/4 cup lemon juice with 1/2 cup brown sugar. I didn't have time for the crock put so I just used the oven like other mentioned and they were pretty good, served with mashed potatoes and used the sauce kind of like a gravy.

Three Berry Pie

OMG delicious! I increased the cornstarch and sugar as others mentioned and added 1 tbp lemon juice and topped it with an egg wash and some cinnamon sugar very good, I cooked just as directions called using fresh fruit I used blackberries instead of strwberried because thats what I had on hand it was a perfect, used a roll out dough too and made it a fancy pattern on top, not bad for a non baker!

Turkey Tetrazzini II

I added celery, onion, and peas as others suggested and still found this very blah, it definetly needs more seasoning and mine was also surprisingly dry I think that using less noodles may help and adding sour cream before cooking. I also reduced the cooking time to 35 minutes.

Soft Caramel Corn

very good but like another reviewer said makes way too much for 3 bags of popcorn, I cut it 1/2 and used 2 bags that seemed to work great, my kids luved it and only took a few minutes to make before enjoying yum!!

Turkey Pot Pie

I love this receipe for my leftover chicken or turkey, I use a bag of frozen vegies and leave out the potatoes because I like to serve it with mashed potatoes but that's just my preference it's a keeper for sure

Honey Walnut Shrimp

I used corn starch instead of the rice flour as some suggested since I couldn't find it, I also dipped the shrimp in the egg whites first then covered with the corn starch and it worked perfectly, the shrimp came out with a nice crunchy coating. However, the sauce is deathly sweet and then to add the sugar coated walnuts on top was just too much for me, I cut the sweetness with some soy sauce but something was still off my husband said it reminded him of candy corn with shrimp needless to say I won't be making this again, and now what to do with a can of sweetend condensend milk with a tablespoon missing???

Baked Coconut Shrimp

I was skeptical that they would get crisp in the oven but they were great! It's a little messy and make sure you generously grease/spray pan so they don't stick but way easier than frying. The bigger the shrimp the better, I got 24 large out of a package of coconut, hubby loved it!

Sweet, Sticky and Spicy Chicken

I used cornstarch to coat the chicken as others have mentioned, I also doubled the sauce and only used 1/2 the hot sauce because I wanted the kids to try it. It has a delicious flavor and we ate the entire pan, I will be making this again.

Mascarpone Stuffed French Toast with Peaches

Good flavor but like others have said it's easier to get use french bread and add the filling after cooking. I was disappointed that the marscapone cheese turned to liquid it will firm up when it cools but then it looses something. I would try with other fruit to since not everyone is a cooked peach fan and I think it could use some crunch like a coating before cooking.

Mom's Best Waffles

this was not good for me, the consistancy was wrong from the start (way too thin) and the waffles were soft and chewy not crisp infact I could not get mine to brown in the iron. I added flour and butter and some vanilla they tasted ok but not my favorite. I froze the extra and put them bak in the toaster to brown.

Baked Pork Chops I

This was great, the only change I made was using chicken broth instead of the wine since I didn't have any on hand and I added some sauted mushrooms and onions in the sauce/gravy. My husband is not a pork chop fan but has seconds of this. Good comfort food served with mashed potatoes and corn, delicious.

Thanksgiving Leftover Casserole

not be a leftover person those was a really good dish, to prevent it from being bland as others mentioned I added chopped onion and celery to the sauce alog with extra salt, pepper and garlic salt. I also used 1/2 & 1/2 since I did not have any evaporated milk on had. It was a thanksgiving cheesy goodness! I think it fits better in a smaller pan for a more layered casserole but very good overall
